Thank you so much for constructing a whole Vietnamese family meal with vegan dishes! I hope one day you might consider working on a vegan Vietnamese cookbook (:

Helen, I married a wonderful Vietnamese woman 42 years ago and she is such a great cook just like you. I think you must be related because she cooks just like you. Today the vegetarian menu reminded me of her favorites. Thank you and we love your channel.

It's a pleasant surprise that jackfruit also grows in sub-tropical and tropical Australia. Even in sub-tropical Brisbane, it does very well in some suburbs, depending on the micro-climate. I remember being amazed having grown up in Malaysia to see such beautiful jackfruit grow to an enormous size at a friend's neighbour's house. I'm sure once the tree is established, there can be almost too many to eat as sweet fruit, so we love using young jackfruit as a "meat" substitute.

Looks delicious! Question, why do you salt the water you soak the mushrooms in? For flavor or to do a better job of cleaning the mushrooms than pure water would do?

I could not find pickled lotus stem in the Asian market but I did find thin and long young pickled lotus root in a jar. Is this what you used in the lotus salad?

The starchy corn is called maize here in the States. It's used to make hominy and Mexican tortilla.

Maize is just another word for corn but with Spanish origin. They are plants that produce kernels used for cooking, and can be use interchangeably but the States preferred corn. It's known by many names depending where you live. Maize is a generic name for corn that's not the sweet corn type.

What oil did you use to add color to the "crab meat" paste?

Annato oil. You can find it in Hispanic grocery isles, too or get annato seeds (they look like red dehydrated corn kernels) and soak them in a bottle of vegetable oil to make your own.

I like Glutinous corn better then American corn because my family has many things we can make that we wouldn’t be able to with American corn and my grandparents always grown them so i would have tons to eat

My entire family is vegan. And I am going to make these recipes for dinner. In the video you showed two fermented bean products. One was Tuong ban. But the other that was in a CUBE form wrapped in paper, I could not see the name of it. Can you please show us what that ingredients LABEL says so when I go to the store I can buy it?

I'm not a vegan, but would gladly eat this every day compared to the vegan trash we have here that's basically putting a slab of unseasoned tofu on a grill and pretending it's 'just like' steak.
