I have a doubt. At 7:20 when the cutter got the disk he could have passed the disk to break side. That would have made things simpler instead of passing it to another cutter in the stack. Am I making any sense?

the first cutter at the stack, AKA the third handler, will hardly get the disc if u do that, because u can see that the distance in the field is very narrow as u move to the front of the stack from the back of the stack. If u make that throw, friendly cutters at the stack cannot do any effective cuts before they pursue the disc, which leads to a very big chance of the enermy defenders to catch up and turn over. Besides , u need to throw a outside-in disc in order to throw the disc to the break side without any interceptions. This not only increases the difficulty of the throw, but also makes the disc very floaty, which gives time to defenders to catch up. Overall this throw is a risky throw mainly due to the time it allows your enermies to react and hardly gain any yards. A normal cut like this could gain a much better yard compare to this throw.Cutters should usually look for your handler if u make the catch to reorganize your another big cut.
