What do you obtain from an Instron- true stress-strain or engineering stress-strain curve?

Stress-strain (true or engineering) help us understand materials' elastic-plastic behavior. Both have their utilities. The engineering stress-strain curve finds its utility in structural applications. In contrast, the true stress-strain curve is majorly used in the processing of materials. Also, most continuum mechanics theories deal with the true-stress true-strain values.
