Preparation time 10-15 minutes (for each type of khichdi)
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Roasting Moong Dal
1 cup Yellow Moong dal, पीली मूंग दाल
1 ½ tsp Ghee, घी
For Khichdi
1 cup Roasted yellow moong dal, भुनी हुई पीली मूंग दाल
2 cups Govind bhog rice (any short grain rice) गोविंद भोग चावल
5-6 cups Water, पानी
Salt to taste, नमक स्वादअनुसार
1 tsp Turmeric powder, हल्दी पाउडर
1 Green chili, broken into half, हरी मिर्च
For Plain Khichdi
½ tbsp Ghee, घी
½ tsp Cumin seeds, जीरा
¼ tsp Asafoetida, हींग
⅓ cup Water, पानी
1 cup Prepared Khichdi, तैयार की हुई खिचड़ी
For Garnish
1 tsp Ghee, घी
Coriander sprig, धनिया पत्ता
Papad, पापड़
For Masala Khichdi
1 tbsp Oil, तेल
6-7 Black peppercorns, काली मिर्च के दाने
1 tsp Cumin seeds, जीरा
A pinch of asafoetida, हींग
½ inch Ginger, chopped, अदरक
1 medium size Carrot, dice, गाजर
1 medium size Tomato, chopped, टमाटर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Coriander powder, धनिया पाउडर
4-5 French beans, chopped, फ्रेंच बींस
1 ½ cup Water, पानी
2 tbsp fresh Green peas, हरे मटर
Salt to taste, नमक स्वादअनुसार
2 Green chillies, chopped, हरी मिर्च
1 ¼ cup Prepared Khichdi, तैयार की हुई खिचड़ी
1 tbsp fresh Coriander leaves, chopped, धनिया पत्ता
For Garnish
Coriander sprig, धनिया पत्ता
For Bisibele Bhat Style Paste
1 ½ tsp Ghee, घी
1 tsp Chana dal, चना दाल
1 tsp White urad dal, उड़द दाल
1 ½ tbsp Coriander seeds, धनिया की बीज
1 tsp Cumin seeds, जीरा
¼ tsp Dry fenugreek seeds, मेथी दाना
2 Green cardamom, हरी इलायची
2-4 Cloves, लॉन्ग
8-9 Black peppercorns, काली मिर्च के दाने
1 inch Cinnamon stick, दालचीनी
½ cup fresh Coconut, grated, नारियल
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Asafoetida, हींग
½ tsp Turmeric powder, हल्दी पाउडर
1 inch Ginger, peeled (optional) अदरक
For Bisibele Bhat Style Khichdi
1 ½ tsp Oil, तेल
2-4 Button chillies, बटन मिर्च
1 sprig Curry leaves, करी पत्ते
¼ cup Prepared Paste, तैयार किया हुआ पेस्ट
⅓ cup Water, पानी
2 tbsp Carrot, peeled, dice, गाजर
2 tbsp French beans, chopped, फ्रेंच बींस
1 ¼ cup Prepared Khichdi, तैयार की हुई खिचड़ी
½ tsp Sugar, चीनी
¼ cup Water, पानी
For Bisibele Bhat Style Tadka
1 tbsp Oil, तेल
2-3 Button chilli, बटन मिर्च
7-8 Cashewnut, काजू
salted Boondi, खारी बूंदी
For Garnish
Coriander sprig, धनिया पत्ता
For Bengali Style Khichdi
1 ½ tbsp Oil, तेल
⅓ cup Cauliflower, florets, फुलगोभी
1 medium size Potato, peeled, dice, आलू
For Bengali Style Paste
1 tsp Ginger, paste, अदरक का पेस्ट
Salt to taste, नमक स्वादअनुसार
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Cumin powder, जीरा पाउडर
A pinch of asafoetida (optional) हींग
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ cup Water, पानी
For Bengali Style Khichdi
1 tbsp Oil, तेल
2-3 Cloves, लॉन्ग
2 Green cardamom, हरी इलायची
4-5 Black peppercorns, काली मिर्च के दाने
1 Bay leaf, तेजपत्ता
½ inch Cinnamon stick, दालचीनी
Prepared Paste, तैयार किया हुआ पेस्ट
1 Green chili, slit into half, हरी मिर्च
½ cup fresh Coconut, grated, नारियल
1 medium size Tomato, roughly chopped, टमाटर
Sauteed Cauliflower & Potatoes, भूना हुआ गोभी और आलू
2 tbsp fresh Green peas, हरे मटर
½ tsp Sugar, चीनी
½ cup Water, पानी
1 ¼ cup Prepared Khichdi, तैयार की हुई खिचड़ी
For Bengali Style Tadka
1 tbsp Ghee, घी
1 tbsp Raisins, किशमिश
½ tbsp fresh Coconut, bits, नारियल
For Garnish

Ek dam thik sir. We call it Bhaja Moong dal er Kichdri. We generally use it when we dedicate it to our God and Goddess during Pujas. So are awesome sir. Thank you conveying Bengali kichdri process. I am elated as a Bengali

In Bengal, we dry roast the moong dal and then rinse it off, once or twice. Hence we don't add ghee at the roasting step. The ratio of rice and dal is always 1:1 in Bengali style khichuri. Many thanks Chef for making Govind bhog rice familiar to all your viewers. 🙏

Khichuri is a rainy day comfort food. I'm a Bengali from Meghalaya and we eat Khichuri regularly as it rains here a lot. We make "non-vegetarian" (according to Bengali food rules if onion and garlic are added to a dish then it becomes non-vegetarian even it is technically vegetarian/vegan if butter or ghee is not added) khichuri with masoor daal and eat it with aloo bhaja (fried potato) and omlette during rainy days😋😋. The khichuri you made looks so delicious, apt for a rainy day.

In Karnataka we prepare Bisibele bath ( In kannada Bise= hot and bele=dal) powder and store it. Whenever we want to cook something urgently we just put that powder and cook it. It turns out to be a tasty and fulfilling dish. Thank you for different kinds of khichadi Recipes ❤️

Ranveer, after watching your very beautiful episode of 4 types of Khichdies, i was so happy, because i always love khichde and that too with lot of Hing and Ghee, and today i learned to make 4 types, thanks Ranveer for teaching us different Indian type of khichdes with so much patience and spending 4.5 hours in shooting this episode. Ranveer one more thing i would like to add pls add alll type of Indian Foods so that we are able to learn all types of Food.

I literally hated khichdi before watching this video.. I made it today.. and I m loving it.... If it's a stomach, we feel it with food... but only you are who make it reach to the heart... Evertime its like, " Aha, dil se khaya!" Thank you Ranveer!! Love you.. You are an emotion..

Hyderabadi khichdi is cooked like a pulao too,and we often use masoor dal / lentils with rice accompanied with mince meat(kheema), imli + sesame seeds+ green chilli and mint leaves chutney, imli ka khatta and some papad.

I love Ranveer because of his respect towards other cultures. He pours his heart into each dish trying to maintain the authenticity of the dishes, I can't say about the rest but as a Bengali that's the exact representation of my Maa's Khichuri. Also the informations he provides during cooking I collect them and show off my knowledge about food to my friends 😝🤭

Sir, we are from Bangladesh(East Bengal) and it's our; actually not only us almost all families of bengal toasted the dal a lil bit before boiling. And believe or not, when you put the dal on the pan to toast, I remember our family recipe though still you didn't tell from where you may have the inspiration of this step. But Listening the term খিচুড়ি(Khichuri) from a chef like You, is real proud for Bangladeshi people. Love from Bangladesh.

We Bengalis don't put ghee on roasted daal, we sprinkle a couple of tablespoons while serving it hot. It adds aroma, flavour and a beautiful color. Coming to the chawl or "chaal" as we call it, we keep a container full of govindo bhog rice just for preparing khichdi for the gooey sticky appearance. And these khichdi recipes would've been incomplete without the "Bangla khichuri" so thanks for including it!

Also Khichadi in our Maharashtra i.e Nashik, Jalgaon n Dhule district are almost similar to each other and hav their own legacy. It's a alternate day dinner menu in almost every house❤️ Khandeshi Masala is the key ingredient of it

Isme to koi doubt nahi ki mai apko follow krti nahi hu. Recently I started following you. I tried panner do pyaza & I received comments as ye dhaba and hotel jaisa hi bana hai. Thanks for that chef. I am working women and every night I cook rice. Kabhi smjh nahi aata ki rice ka kya banaye jo healthy ho and tabhi fir ye video suggestion me aaya, I watch and trust me today I am trying masala khichadi. Thank a lot again cheif❤

Hello Ranveer, I am from Pakistan and here we make Lucknow style khichdi, i.e. Pulao of mung daal. I didnt even know about porridge style khichdi until I saw this video. But I must admit they all look delicious! Thank you for sharing these great dishes. Can't wait to try it!

In khandesh we prepare khichdi in a bit different way .. and eat with urad papad and the best part is the remaining khichdi is eaten next morning and we literally fight for it it's that tasty😄

Chef, in authentic Bengali khuchuri , we dry roast the shona Moong daal , then rinse it off the impurities, and then again roast it in ghee after adding the 'foron' along with soaked rice.. hence the roasted wet daal and rice are roasted in ghee with the foron (jeera ,whole garam masala and bay leaves) ... And the ratio authentically is gobindo bhog : shona Moog daal = 1:1 Thank you very much making and sharing these delicacies ..
