Chilli sauce:
200g Green Chillies ( I recommend using 3 kinds)
5 cloves garlic
60ml Lemon Juice
60ml Olive Oil
Qudseya:
400g Ful medames
100g Cooked Chickpeas
75g Hummus
1 Tbsp Tahini
4-5 Tbsp Chili sauce
Mferkeh:
300g Frying potatoes
3 Eggs
1/2 Cup olive oil
1/2 Tsp Salt
1/4 Tsp pepper
Qalayet Banadoura:
750g Tomatoes
1/4 Cup olive oil
6 Cloves Garlic
1/2 Tsp salt
1/4 Tsp black pepper
To make the Chilli sauce:
Add ingredients to a food processor or blender, and blend until chunky. Flavour will develop over a couple days
To make Qudseya:
1- Heat the ful in a pot and cook until the beans are soft
2- Lightly mash them, then mix with the remaining ingredients
To make Mferkeh:
1- Slice the potatoes into small chunks, and heat a pan with the olive oil
2- Fry the potatoes on all sides until golden, then remove most of the oil
3- Add the salt and pepper and mix, then crack in the eggs
4- Scramble together and serve
To make the Qalayet Banadoura:
1- Add olive oil to a pan and add a green chilli
2- Cook on medium heat till the chilli is seared
3- Thinly slice the garlic then add to the pan, and cook until turning golden
4- Add your tomatoes sliced in half, open side facing down
5- Cover with a lid and cook for 5 minutes
6- Remove the skins of the tomatoe halves, then break each one into 2 pieces
7- Cook for another 10-15 minutes until chunky

My ex-husband is Palestinian and I lived with his family for a while. His mom had a garden and made everything from scratch. I often crave her cooking and miss eating at their home. The food during Ramadan was just mouthwatering. The first thing she taught me was how to make mint tea, it was extremely important to her ☺️ she is such a sweet woman! He and I divorced on good terms but I don’t live near them anymore so I decided to start making the food myself. I can’t wait-this looks delicious. We ate a lot of these dishes.

This brings back so many memories. I must admit I cried a little tear thinking about my aunt living in the West Bank when she would take me walking on the mountains collecting zaatar. As a boy growing up in Northern Europe those memories will always stay with me and I cant wait to see them again. Thank you for making this video ❤️

I love this so much. So much nostalgia. Growing up, we always had a bowl of olive oil and another bowl of zaatar sitting on the kitchen table for everyone to snack on throughout the day. If you want to try Palestinian falafel, my grandma in Gaza used to make me the best falafel I've ever had. They're stuffed with onions and sumac, and we Gazans also like to add chillies to the mix. Some cook the onion stuffing beforehand some don't. I believe the sumac and onion stuffing is also eaten in Jerusalem.

A Palestinian friend shared zaatar with me before, but I didn't know the name so I started just getting thyme and other herb/spices to make my own. It's my go-to when I eat bread, but this will be so much easier knowing I can just buy the spice mix! The other dishes look so good, excited to try them myself!

There's a Lebanese place down the street from me that sells zaatar. Absolute game changer! The lemon-y taste of the sumac is what makes it for me. I absolutely can not live without it now.

This episode reminded me of something. When I was a child, there was a Turkish bakery down the street where I lived. It was totally unique for my Middle European city and for the time. I loved it. I especially loved the sesame bread rings and the flatbread. My mother loved the baklava and the quality of the olives they had. I remember the whole street smelling wonderful, because of this bakery. It was so disappointing when they closed. To this day Turkish Bakeries (there are so many now!) are a guilty pleasure that I can't resist.

3:11 That Mferkeh is known in Germany as "Farmers Breakfast". Panfryed potatoes... with egg thrown over at the end. Sometimes there is bacon in it and onions as well, but the most basic version is potatoes and egg. We usually cook the potatoes using a steam method and then first use part of them as potato salad, and the leftover... gets fried next day.

Za’atar is my new favourite spice. I’m from a Pakistani background and the spices we use are more robust but za’atar is absolutely delicious. I bought Palestinian Za’atar too 👌

Those spinach pies and those “pizzas” are some of my favorites - also so incredibly delicious! I grew up eating the Armenian sister versions of those so I’m VERY excited and looking forward to trying your recipe for those! A Palestinian friend of mine used to make tea like this. He used a special sage that his mom had to import for him, not the normal sage you get here in the grocery stores. Also he made it with a lot of sugar. It was super-delicious and really good for settling your stomach.

I'll be eagerly awaiting your fatayer video! I've contemplated making it myself before but I always fall back on just getting it from the bakery. You always explain the method so well, I would definitely try your recipe. (especially if you make one with akkawi!)

I am here after reading, 'Tasting The Sky' by Ibtisam Barkat. And I am so glad to be here. The staple pantry and fresh produce of your cuisine has so much in common with the North Indian cuisine that I am totally motivated to try making these. Halba in India is called Halwa. It is made with ghee, semolina and sugar. Other variations include making sweet mashes with lentils, carrots, squashes. The savoury finger food version is steamed and tempered. It is called Dhokla and has a breakfast version called rava ( meaning semolina) idli ( rice cake).

This is pretty good. You missed a few item from the Palestinian breakfast, mainly the Labaneh, the Nabulsi Cheese (Palestinian white cheese), and the black olives.

Yes we were going to serve labneh, but didn't like the one we found. We also couldn't find Nabulsi cheese. We want to do a full video on Labneh sometime in the future, how to make it, serve it and use it.

@@MiddleEats Just make the labneh yourself, it's real easy and not too messy. Store bought labneh isn't worth the price, and you'll nail the recipe in like two tries for sure. My sister's tip for making labneh is - salt the yogurt until it tastes like amazing ayran, at that point it's ready for straining. Also she taught me there's no need to hang the cheesecloth if there's no convenient way to do it, just put the tightened bundle in a colander over a large pot (about 2-3 times the volume of the yogurt) and empty the pot after 1-2 hours before you go to bed. Within 2 hours about half of the water comes out so you can make sure the pot doesn't overflow.

The za’atar is my favorite!! Just like Salma it is nostalgic to me , it was and still my favorite breakfast, used to get it from the bakery on my way to school 🏫 thank you both for bringing sweet memories to me this morning 🙏🏼

I love how you explain all the food and how different countries do it.., it interests me to try. I haven't tried much Middle Eastern food but I was able to try cooking with Zaatar when I used to work in hotel industrial kitchen. It's very lovely lemony kick that I really crave. Hope I can cook with it again. Your channel is a great find! Blessings to you!!

you should try tahina with date molasses (عسل التمر), it's a really common ingredient in Palestine and it's also amazing in baking or just as a sweetener instead of honey

Oh my God, my grandparents in Turkey made me some tahin with pekmez and eating it was mindblowing to me. I love sesame and the fact that so many East Asian and Middle Eastern countries combine it with everything.

I love the egg and potato dish in Cyprus or Greece we call it “village omelette” and we also add sujuk but we cut them into discs. U have to try it with Sujuk (souzoukakia). For the zaata we just cool it mountain thyme or wild thyme

I had a lot of Palestini friends in college and a few Jordanians. Since my elder brother had a sports shop they would all visit the shop for footballs and football shoes. I remember vividly the time they would come for the annual Gharvi prayers of Sheikh Abdul Qadir Jeelani of Baghdad Sharif. After all these years I do not know where they are but one persons elder brother was working in Kuwait Islamic Bank.

The egg and potatoes mixture also go very well when you combine mushrooms into the mix; I don't know if mushrooms are ever used in Middle Eastern cuisine but that's just something I do, melt in some cheese and your taste buds will be dancing.

Yes we are Palestinian and there's multiple variations of this recipe, one of them being mushrooms, another that includes sun-dried tomatoes, another that includes cheese, and lots & lots of garlic!
