"Bing" means pancake or cake (depends on the context) in Chinese so you can call it a scallion bing or scallion pancake! Scallion pancakes hold a special place in my heart as it's one of my favorite finger foods as a child (and still is now) so I'm really happy to see Grace dabbling more into Chinese cuisine!!! :)

Grace hi! When you make the scallion pancakes, to get a really nice flavor, first gently cook the scallions in the oil to make scallion oil and then pour the hot oil over the small bit of flour. This will partially cook the flour and give you a tastier filling and better texture! Also, when rolling out the dough (thought it may seem weird) use some excess oil on the table instead of flour. It's a fairly oil-y treat and flour can dry it out

wow can't believe you made chinese scallion pancakes (congyoubing)! I grew up on those as their a popular street food in Taiwan, so nice to see you trying traditional food I grew up with! You can even fry it with some egg, cheese, ham etc to make it like a savoury breakfast pancake and fold it up like a crepe. Also super impressed you made them from scratch, i've only ever bought them from market stalls or from frozen so props to you!!
@ek.s.31404 жыл бұрын
Hi! Could you please elaborate on the “add eggs or ham” do I first fry the pancake and then just use it like a tortilla wrap (for lack of a better analogy) or can the ingredients be added while cooking?
@emxxly4 жыл бұрын
@@ek.s.3140 you'd first cook the pancake and remove it from the pan, scramble up some raw egg and pour that on the pan like a crepe, add whatever topping, then place the pancake pack on top the egg while its still half cooked so that they stick together, let it cook for a bit, flip and roll it up! found a vid that should help :) kzbin.info/www/bejne/oH6kg6t3Zq5pnNE

POMEGRANATE HACK: cut the pomegranate in half. Pull on the edges of the cut just a bit (to hear a CRACK or grack hehe) so that the seeds loosen up a bit. Then take a wooden spoon and a big bowl. Hold the pomegranate half face down in your hand and beat the outside part with the wooden spoon. You'll see that the seeds will start to pop out in no time. Not sure of my explanation mastery on this technique but I'm sure you can find a video on youtube on how to do it. I SWEAR it's by far the easiest way to de-seed the ole' pomegranate. Pls try it out, it's well worth it! Love you loads!

Not cooking off the veg will make the pomegranate more palatable in that salad! Broccoli is actually really really bright in flavour when uncooked, so goes with the sharp pomegranate really well! It goes against your natural 'steamed, boiled, baked' instinct with broccoli, but it's one of my favourite versatile veggies now! Eat it all year round!!
@SherryAnnOfTheWest4 жыл бұрын
Grace --- do you save your scraps? I've started using the carrot tops, onion peelings, zucchini skins, broccoli and asparagus stalks, etc. in a Zip Lock bag in the freezer .... I've even added some meat bones & the stuff that's left in the garlic press after you put garlic in a recipe. ANYWAY ... when I need stock or cooking liquid, I put all that in a pan covered with water & simmer it for an hour or two ... instant, FREE veggie stock that tastes really fresh & good!!! I don't use cucumber skins or things like that, but anything that would be good in a stew. Give it a try ... it's hard at first to remember NOT to throw that stuff in the trash, but just have a zip lock bag near you when you're preparing veg and throw it in the freezer.
