Dear Julia, I was born and reared in Albuquerque and attended St. Mary High downtown. We lived on West Tijeras nearly across the street from SMHS. If I'm not mistaken there were a couple of Pacheco's in the class preceding ours. I graduated in 1961. Do you think any of your husbands relatives might have attended the same school(s), that is St. Mary's Grade through High School? I do a breakfast casserole once a month. Gives me a way to clean the fridge out. I've never tried sheet pancakes. They look so easy.

I emailed Julia Pacheco link to my my granddaughter who's in uni and she loved it, turns out quick and easy recipes are great for people in a rush. Now for scrambled eggs we use yogurt, sour cream, quark or even cream as a substitute for milk.

These are awesome breakfast ideas. I am single and get tired of the same old breakfast and cooking for one person can take up a lot of my time (cooking and cleanup) for 3 meals a day. Now I can make a lot of a variety of breakfasts while having choices.

I started making sheet pan pancakes instead of single griddle pancakes about 9 months ago. I have never looked back. This so much easier. I make huge batches and my kids just pull them from the freezer as they want them. Yum!

I make a big batch of scrambled eggs like this when we go camping. Only I use an open fire... lol. I use disposable foil pans. Keep them covered & stir well every ten minutes or so until done. Way better than making eggs separately for so many people.

My Mom would mix Jimmy Dean bulk raw sausage meat with equal pound of lean hamburger and season with dried fennel. So good as breakfast for dinner with pancakes or waffles with berries & Cool whip.

OMG! Thank you so much for these breakfast recipes this makes life easy for me when we go up to our camp and although our camp is more accommodating than most camps and have a full functioning kitchen it is still nice to now have these breakfast recipes especially over deer hunting season. These hunters get up so early but they need to eat something before they go out or even the breakfast sandwiches would be great for the hunters to heat up and then take out with them when they're they're hungry later in the day . I am the camp cook and I make dinner for them however I'm not getting up to make breakfast and I listen to all the guys grumble who's getting up even earlier to make breakfast for everyone this is so perfect thank you so much for these wonderful ideas please keep them coming up 😊😊

Hi Julia. For my chicken fried rice recipe, I make scrambled eggs in my microwave now! I whisk everything together, microwave minute by minute, stirring in between. It's so easy and quick and with minimal clean-up!
