Hello from Turkey to the beloved Japan! About the olive oil... I am from the west part of Turkey where olive is very abundant. it is the indispensible part of our cuisine. Anyhow, there has been a debate going on whether olive oil gets oxidant when it is exposed to the heat. So, I have started adding raw olive oil to the already-cooked dish. And if I have to use some oil right away to fry or saute, I go for 'ghee' or cold pressed organic sun flower oil; if no other option, I still go for olive oil. In eastern culture, ghee is believed to be very healthy and nutritious and quite resistant to heat. Thank you for your videos, they are so inspiring and lovely. Hope to watch more of them. Actually, the presence of acrylamide is NOT specifically labeled throughout the US on the shelf of foods that have this ingredient, as shown in the chips you showed at 1:47. The requirement to shelf-label acrylamide is specific to a California state law (as stated on the notice). The other 49 states do not have this requirement/law. You would have to look at the list of ingredients on the package's label to know what is in the item you're purchasing. (A full consolidated list, disclosing all of the ingredients in any food item, IS required to be shown on a label, across all 50 states and territories of the US.)

As an Italian viewer, I can only say… using olive oil for cooking is the best! Use it forever 🤣 only, don’t burn it: be very careful using it. It’s also really good for seasoning salads and some meat and fish dishes.

Can i ask what exactly you mean by 'don't burn it'? I usually shallow frying for max 10-15 mins. But I've been avoiding extra virgin olive oil for heating as i heard it is not good. But now I'm reading something different from Italian person and I'm just curious! Thank you.

I agree with the below comments. Olive oil becomes toxic when used for frying as it has a low smoking point. A better alternative would be rapeseed oil or coconut oil. I still use olive oil but for seasoning salads as good quality extra virgin oil is delicious.

@@Pawlinkaaa olive oil when is too hot can burn off, reaching a “smoke point”: after that it’s no more usable and must be thrown away.

My fav drink for lunch and dinner is genmai cha. I use loose tea and brew it in a beautiful iron Japanese teapot. I had a Japanese neighbor and friend when I lived in Manhattan and she introduced me to it. I use extra virgin cold pressed olive oil that has a date on it for cooking and salads. The date tells when it was first pressed so you know the age of the oil you are using...best to use within 2 yrs of date. For high heat, I use avocado oil and for Asian dishes a little toasted sesame oil. Whenever available, buy organic oils.

Cooking oils: according to the Weston Price diet, one should use solid fats only for cooking, such as coconut oil or animal fats (preferably organic). Cold pressed olive oil is good, but avoid heating it and use it for salad only.

I use a little ghee (home made) or clarified butter to pan sear salmon, eggs, vegetables, tofu... Using ghee works like a charm because it can cook at a high temperature without smoking.

in Spain we love olive oil, you can use it in too many forms and its the best way to cook healthy but, you shouldt use it to fried food because this type of oil cant resist hight temperature. The sunflower oil its better to fried.

I switched to avocado oil. It's healthy fat I use it to cook everything I use oil for, including popping popcorn on the stove top. I found that olive has strong floral taste that doesn't taste good when I cooked my popcorn. Avocado oil is tasteless. My nutritionist approved it, as well

I didn't know avocado oil existed. But I'm not really a fan of avocado products since to produce avocados deforestation has increased drastically (to produce avocados and quinoa) so, dunno if I'll try. Frankly I love avocado taste A LOT and so on, but every time I see one I feel so guilty 😭 so I'm trying to avoid big avocados consumes. But thank you for the knowledge.

Really cool video, Aki. But please be carefull while cooking with olive oil. It isn't good, if you use it by cooking over 180°C, because then trans fat acids form. P.S: Your channel brought me to get more minimalistic and to Matcha-Tea. Furthermore it is really nice to learn about japanese culture from you ;)

I have done a change in my diet 3 years ago and I felt really better after it 🌺: vegetarian diet, I replaced Milk with soy milk ( I cannot digest milk ) and I really like soy milk ; I should reduce caffeine too but as an Italian it is really challenging 😅; about extra vergin olive oil it is important in Mediterranean diet but when possibile I try to avoid cooking with oil and I add it after , as a dressing ; for sugar I try to use less ; I can advice be careful with honey as it can raise blood sugar too 🤗

I think olive oil is great but I would be careful about the smoke point, which is lower than other oils, like sunflower oil or peanut oil. When oil gets smoky in the pan, it can become carcinogenic. If it doesn't get that hot, then it is ok. :-) Great idea by the way, eating dates!

If you’re using olive oil to cook, use Pure Olive Oil. The process to make it is different. It can go up to a higher temperature. Extra Virgin Olive Oil is a garnish and heating it up will remove all its healthful properties, a bit like how you shouldn’t boil miso.

A lot of Olive Oil is cut with Canola (rapeseed) or other cheaper oil, so just be aware. You can find a list online of Olive oils that are pure. Single origin is a good sign. For higher heat, I often use avocado oil, ghee or animal fat (Lard, Tallow..etc). Cultured or grassfed butter and virgin coconut oil a bit too.

Can consider avocado oil if you have enough budget. You can use avocado oil dress up salad or fried what ever food you want.

As someone with histamine intolerance, i had to stop eating many Japanese foods and dishes, which is very unfortunate, because a traditional Japanese diet is probably one of the healthiest regimes ever. But fermented foods cause in me so many problems, I had to basically cut everything out except the odd dish every now and then. Just subscribed, looking forward to more content!

My favorite cooking oil is Organic Canola Oil - because it’s high in Omega 3 Fatty Acids, which are very good for your physical and emotional health 😊

From southern part of india .. Vote for coconut oil and Ghee ..( i also advocate use what is locally grown ..olive oil is great ..it is also for Mediterranean areas ..so find whats native to the land that you are living in) And everything in moderation ....even if something is super healthy..going overboard is not going to give benefits .. Another benchmark that works for me ..eat sleep and exercise (as close to as possible) the way my grandparents did ( mine lived in a village so it works) .. Eat local /natural/ unprocessed/ moderate quantities/ 3 meals only with 12/14 hr gap between dinner and breakfast ..

As I see everyone has its own way of cooking! 😊 👍Olive oil is sure a blessing! 😊 And I am team soy milk too! 🥛👍 I prefer to use ghee as well to cook as there is no caséine /lactose inside and it can be heat instead of other oils. It 's very easy to make using usual butter at home. 😊 I still keep my coffee but I don't drink instant. The problem with matcha is it can contains mercury residues sometimes. We only use acacia honey and local honey here because acacia honey is the only one that don't raise the sugar in the body. And except if we make sport dattes are too sweet for us. 😅 White bread is not so popular here we prefer it brown with more fibers inside. 😅 It was difficult to find it in Japan

For me it's: bread, caffeine, cooking oil, cereal and packaged deli meat. Bread isn't bad per se, but I just find myself going weeks at a time without eating it. The reason I quit caffeine was the same reason you quit coffee, I could tell it was doing something to my gut health, the microbiome in the stomach. When I stopped taking in caffeine my appetite changed and moods changed completely as well as being able to sleep again.

How To Live In Harmony With Nature And Reduce Pollution 1. Many Production Which We Do Not Need Actually For Human Beings Has To Be Stopped We manufacture so many products and it is creating pollution. So if we minimise our products, pollution would be less. We produce so many things which we do not need, like cold drinks, leather products, potato wafers, chips, fruit juices, chocolates, biscuits, pickles, ice creams, etc. Cold drinks, fruit juices, pickles, ice creams, etc. Should be cooked at home only. If we stopped producing this things which are not required for humans, so much pollution could be reduced. If we colour the clothes pollution occurs. So if we don't colour our clothes, the pollution resulting from colouring the clothes can be stopped. Let everything remain in white natural colour. 2. We Should Cook Foods In Its Natural Form We can cook rice and wheat in our homes and eat it. Rice and Wheat is produced in farms. Then it is packed and transported to big warehouses, then wholesalers buy from them and supply to retail shops. But if a manufacturing company makes bread from rice and wheat, then to make bread a manufacturing company has to be set up, machines and working staffs are needed. When a company is built many other things are also needed. Then at last a plastic pack is required to pack the breads. So if we start cooking eatable things in its natural form then we do not need many companies like bread manufacturing company, tomato ketchup, noodles, fruit jam, pizza, burger, etc., the things required for the company and the plastic pack, paper box pack and glass bottles. If done like this, so many companies will not be required and hence less pollution for the world. Also we could save our money like this. If you buy a packet of bread, it would cost you more money than if you cook wheat and rice in home. Previously before industrial revolution, we didn't have technology, but our foods were rich with nutrients. Now we have technology, but technology is polluting our foods and our foods are not rich with nutrients, and because of that also we have health problems. If this is done, then many jobs would be lost. For that many peoples should do farming and they should be given loans if they do not have enough money to start farming on their own. Food, Medicines, Surgeries and Education's should be made free to the world till the world settles down with farming. After that food, medicines, surgeries and education's should be stopped free to the world. Many people should study botany subject so that they have knowledge of plants and they should do farming. Is their any another solution, that humans won't lose jobs and also pollution would decrease. Humans have to take this step certainly instead of going on polluting the earth, making wildlife extinct and also mass extinctions of humans in future. 3. Electricity Pollution We create electricity from many types of sources like coal, water, etc., but it creates pollution. If electricity created from windmill and solar energy then no pollution occurs in the creation process. But still to manufacture windmill and solar machines pollution would occur. As I previously said that if we shut down many manufacturing companies which are producing things which are not needed for humans, then the world would not require so much electricity. If less electricity required, then less pollution generated. 4. Could We Stop Drinking Cow's and Buffalo's Milk Whatever vitamins and nutrients we get from milk, if we can get it from other eatable things, then we can stop drinking cow's and buffalo's milk. As milk has to be packed in glass bottles and plastic packs and then transported to places. All of this can be stopped. For infants whose mother's have died or mother's who cannot breast feed their infants, only for them cow's and buffalo's milk should be given. We use milk in tea and coffee. Instead of milk we must use lime with tea and coffee or just plain tea and coffee. A lime should be cut into a few pieces and cooked with tea and coffee or something else can be used instead of lime. 5. How Much Should Be The World's Population Every place should have a single house. No buildings, everything ground floor. If we do this and the whole lands of our planet earth would be occupied one day with homes, farms, forests, schools, hospitals, etc., then we would come to know how much our planet earth can have maximum population. Once the population is determined, then we have to maintain that population. For example if our earth can have a population of 10 billion peoples, then when the population reaches 10 billion, then everyone should have only one child till the population reaches 9 billion peoples. As if we have only one child then the population decreases. When population is 9 billion peoples, then everyone should have 2 children's till the population reaches 10 billion peoples. After that again we should have only one child. In this way population can be maintained.

Organic virgin cold pressed coconut oil. The most stable under heat conditions. It is great for cooking and baking. Also, multiple health benefits.

Olive oil is my favorite oil . Sometimes i use coconut oil too, or roasted sesame oil to get a different flavor . Scrambeld egges ( dont know if you eat egges...? 😊) taste so very good made with organic coconut oil ! 😌 oh love Dates too. Medjjol are my favorite . I open them and fill each side with a half walnut . So delicious as an desert with a cup of a good green tea . ☺have a good Day .

Dates are delicious. I can get date sugar in the US, maybe you can, too (but it's good to have the other parts of the date, like the fiber and vitamins, that you find in the whole fruit). You're right about oils too, most are really bad when heated (which is how they are usually used). Olive oil has a lower smoke point - starts to smoke when the temperature is lower than needed to fry foods. I use avocado oil and coconut oil (not too much - coconut oil is saturated, and can flavor the food you are frying).

I grew up with mustard oil. Though refined oil has become common these days we still stick to the original. Now I get an upset stomach when I eat something that is cooked in cheap oil.

Nice video! Regarding cooking oils, olive oil is good, but has a low smoke point. I use other natural oils like grape seed or sunflower for everyday cooking and use extra virgin olive oil for dressing salads or finishing pasta. Thanks for your insights on minimalism!

Hello from the USA! I find it odd that Japanese snacks are displayed with a warning label, when in fact many of our own snacks contain similar carcinogenic ingredients. Several American snacks are even banned in other countries.

They are unhealthy due to high saturated fat content. Better to cook with no oil at all, since it is a processed food. Excess fat is linked to atherosclerosis, heart disease and diabetes.

I've also found that I've had to eliminate coffee and milk from my diet. Also, I had to give up chocolate, licorice, and cruciferous vegetables like cabbage and broccoli. I know only too well what you mean by your insides not being happy. I hope you continue to feel better with your new eating habits.

Grapeseed oil and sesame oil is okay to cook with. I'm trying to not use any oils just now! It's a bit extreme, but works for me

I had to stop drinking coffee years ago because it gave me severe panic attacks. I also use Olive Oil and I avoid Milk, too. My only issue with using soy milk is finding ways to use it so it doesn't go to waste. I've been also trying to limit sugar. I haven't completely, but getting there.

Great changes that will improve your health. Coconut milk is also a great alternative tô cow's milk, and coconut oil is great for cooking. Dried plums and apricots are also a great sugar replacement since they have a lot of vitamins and fiber.

Because of your influance I want to drink matcha every morning instead of cofee. I really like the matcha flavoured thinks. Olive oil not always a garantee for pure olive oil. They often diluted with cheap oil. Pure is really expensive. We like to use fat or rapeseed oil. The last one is perfect alternative for oily dishes, like fried potato. It's healthy and help burn belly fat. It was really cheap in my country a few generation ago. Now it's more expensive than sunflower oil. Fat is cheaper, but I can buy homemade swine fat for a good price, and everything is more delicious with that. If I don't want to eat the skin of the chicken, I can fry it, and gain fat and make a few "tepertő" from it. What is a delicious snack with salt. I also like to use butter, what make food more delicious! If I use the owen I have to use less oil or fat, and I can buy expensive oil like rapseed oil. Usually we use less oil or fat, because we don't like heavy dishes. My stomach also don't like the milk. I try the lactose free milk, because other milks are expensive. LCF don't ruin my stomach. But if we get from someone walnut (and we don't like it too much to eat) I can make walnut milk from it.

I recently started using Avocado oil . The only difference with the traditional oil is that avocado oil you can have it on high heat because it gets real dark but other than that it was amazing on my stomach maybe you should try it 😉

I would recommend grapeseed oil for cooking instead of olive oil. Olive oil has amazing benefits when it is consumed cold, but when it is heated, it becomes carcinogenic .

I think variety is important, so I never restrain my diet, but in my opinion what makes a big difference is the quality of your ingredients. Also rules can change from country to country, for example here in Italy we are super strict with food, even imported ones, packaging and how food must be produced. Usually when I can I buy near farmer's product and buy olive oil from south italy -spectacular quality-. I like to see where stuff are produced and ingredients. Just by that you can understand a lot and decide which product fits you better.

I've stopped eating oils, sugar and all animal products years ago. Whole food plant based here, and i've never been better. I kept saying that i loved animals but, i was eating them. I decided to be coherent.

In France we use a lot of olive oil but also many people use sunflower oil because it’s cheaper (maybe not these days because of the war sunflower oil’s price has grown) You can also use grape oil, but maybe to expensive in japan. Olive oil is a really good one by the way !!

I heard that ghee is a good option to use for frying, also a kombucha is a great option for a yeast drink and my favorite dates are Medjool: very juicy, not dry at all.

Dear @samuraimatcha the reason milk Make you stomach ill is lactose presence the best substitute for that is kefir is a milk fermented is way better than soy milk you can drink during meal after meal before meal what ever need also you can drink yougurt with pinch salt so you can have electrolytes back in the system the name is called ayran typical Arabic yougurt drink, but still kefir for me is way better I used to drink soy milk but I found healthier bones stronger no issues with stomach ill plus is probiotics helps with digestion is typically drink from east Europe that drink have many nutrients more than soy milk but soy milk is always good option I grow up drink it when I was younger know I changed to kefir

honey is a natural product. Already self-digested But it is glucose. Sugar. It raises blood sugar levels. Do not abuse. Agave syrup can replace it for its sweetening power.

Nice video, I am doing the same thing that you, I am avoiding eating some foods such as sweets and chips, it´s really hard but, in the other hand, it´s also healtier to do so. I also prefer to buy olives oil instead of something unalthy like cheap oils, first because I can´t stand the flavor and second, because it´s not good for our bodies, but I didn´t know about the toxic chemicals that it contains, thanks for sharing it. Avocado oil, coconut oil, sunflower oil, are all good for you. Just remember to not use the same thing too much. Variety is key with your diet, eating the same things all the time will eventually leave you deficient in some areas with an over abundance in others. Many Blessings and Good wishes to you!

Oh I did the same as you : no more sugar and good oils. To cook, I use olive, sunflower and coco oil. For dressing I use colza (nanohana) and flax seed oil. I always buy them cold pressed and virgin.

Good work with coffee… however All caffeine causes a big load on the adrenals that will show up later in life. The adrenaline produced when drinking it slowly toxigies the liver. Maybe get more fruits in more often… and it is entirely possible to tmcook without oil entirely. No oil means you can have avocado then without … again… overburdening the liver . Thank you. …ps. Good job with the raw honey… that yeast drink doesn’t sound like a very good idea tho.

Some Date varieties can actually have sugar similar to sugarcane and others have sugar that is absorbed differently so it's isn't digested the same way as sugar from sugarcane. Always read the labels. All dates are delicious :)

I have some ‘Good fats’ to recommend. Once you gave eliminated all preservatives these reduce inflammation in your stomach/intestines - and also in your joints, as you age! Good fats: coconut oil, olive oil, unsalted cultured butter (with a culture like yogurt, buy from small dairy farms) cacao butter, avocado and duck fat!

Eat olive oil raw. Add it on salads, and other foods once you have finished cooking. Don't heat olive oil; it changes the benefits.

Great video thank you. From my recent research on oils to buy and eat: Always use cold pressed organic oils. Olive oil is great for using cold or cooking at very low temperatures only. Great oils for cooking are peanut oil and sesame oil. They are both oils which were used centuries ago and have high smoke points. They also taste great. (Avocado oil is not a great idea to buy (as well as avocados) as the production of avocados is having a high negative ecological impact). For health coconut oil is less good to use.

Pacific islanders and indian Southern states traditionally use coconut oil. For centuries. Western media has bad mouth this oil to sell their crabby oil.

Very thought provoking! Thank you for sharing. I've been having the same sentiments about sugar for a while now. I don't actually use sugar itself much, (only in my porridge occasionally - and trying to transition to honey on that one), but there is a lot of foods that have sugars "snuck" in them. For example, I love fruit juice that is sold in convenience stores, but when I look at the labels there's hardly anything in it that actually resembles fruit(?!) and has lots of sugars instead. Making juice out of fresh fruit is far too expensive. (It is here where I live at least.) I have however given up drinking fizzy drinks and alcohol is rare too, and I found it lets me sleep better at night. Also ditched snacks and crisps and the like. And another thing that has been working really well for me is only eating between the hours of 8am and 8pm, and only ever a "two palmful". Coffee... this is interesting, because I have given up the instant stuff which just gets my pulse racing and makes me feel like bouncing off the walls, but I do brew coffee in the morning from beans and that is nice, as well as part of my morning wake-up-welcome-back-to-the-world routine. I suppose it's more of a ritual than consuming a lot of it. Do have an after-work-wind-down ritual of making jasmine tea however and that is always nice - even the sight of the iron kettle gets me happy! Will have to try and find matcha - I've never tried it before! Milk.. I tried goats milk for a while, but I had to go back to the full fat cow one .. Will try soy milk, maybe that work! Cooking Oil - YES. I've been using vegetable oil and sunflower oil, but lately no matter what brand I buy it's just not the same, (I stare at it and wonder "is this the stuff cars could run with??") so i alternate between lard and olive oil. I go through silly phases with fruits. Sometimes I eat a melon a day, other times I can't get enough of bananas, or I'm munching away on celery every chance I get - it's a little weird and my colleagues find it endlessly entertaining, but it's just how I function.. Persimmons are my newest obsession!

Organic Avocado Oil, it has minimal taste, and is lighter, and you don't need as much. Overall it's also less fatty than Olive Oil. Idk how but yeah. Ghee is also great.

Olive oil is great if you dont heat it. If you do, it becomes non diggestable. I recommend coconut oil which can be heated to very high temperates without getting dangerous to your body.

true...that or the quality is poor...I'm lucky and and can order via my Chanoyu teacher from Japan sometimes. I can recommend ordering from cafe mamecha - a green tea cafe in Berlin (i think the quality/price ratio is decent and love the cafe :) )

honey is plain sugar, too. it has some trace elements, but it's still sugar. soya milk is not fermented so it is not healthy at all. it is better to use oat milk, but you have to pay attention to the composition - it supposes to be only oat, water, sugar, and oil. and it is also good to stop eating white wheat pastry. no wonder you got uncomfortable after drinking the animal milk. most people can't digest it.

Sounds like your main source of energy is sugar. Try eating fat instead. Fat, protein, minimal carbs. For sweet taste try stevia or xylitol.With fat, these can make quite good sweets.
