The chicken and dumplings were great, and for a work lunch, I put a generous serving of them on top of the leftover broccoli I served with it for a veggie and chicken bowl. Will put this on repeat!

Love these meal ideas! So smart to buy an on sale meat and use it all week for a variety of yummy dinners! Thank you for normalizing "real people" food! Our families enjoy similar styles of cooking. Chicken and dumplings was a" luxury" meal when I was a kid, or at least we thought it was. We didn't realize it was cheap and filling. My mom always made them without the chicken in them. Sometimes we would have the cooked chicken on the side or it was used in a different meal. We always had potato salad and biscuits with it... One of my favorite meals from my childhood. Now my kids always love when I make chicken and dumplings... Thanks for the inspiration!

I used to have quite a stockpile, but time and circumstances have changed in the past 12 years so I miss having a plethora of items to gaze upon, lol. I have been using instant low sodium broth for years before the change in food prices. The flavour is pretty nice. But I do prefer homemade broth with white pepper and red flakes w dill.

Thanks for sharing these simple, yet family friendly meals. I do have a suggestion of something that works for me. While the pressure cooker will definitely cook the chicken in 40 minutes, in my opinion, it does not give the broth enough time to really develop. If you have time, try removing the meat from the cooked chicken, then put the bones and skin back into the broth and cook it another 45 minutes or so. You can even add the veggie scraps if you have been saving them. Onion skins really give a beautiful color the the broth. The 45 minutes is not set in stone. Any amount of time will help, but the longer the better in this case. I am sure yours was delicious, but if we have a little extra time, why not amp up the flavor and nutrition by turning broth into a quick bone broth?

I have never seen a dumpling that looks like noodles before! Dumplings that I have made, eaten, or seen are always dropped or spooned in, like when making drop cookies, then they become a pillow of tender dough that you break up with your spoon. Is this noodle style a typical dumpling in the south?

Another recipe Chicken spaghetti and my daughter loves minus the chicken, but you can add beef for protein Bake 350 for 20-30min. in casserole dish chicken or not-1/2# or non or other meat if you like or no meat 8oz pasta-16 oz larger family-cook first 8 ounces cheddar shredded-handful in the mixture and then top with remaining 1 can rotel with liquid 1 can mushroom soup we do not put the 1 can chicken cream soup but you can put in or add broth if dry heat in pan oh on chicken you can use rotisserie from store if you like can of mushrooms or 1/2 or small sliced fresh-I cut big enough daughter loves, husband does not-so you pick put if you don't like This again makes at least 8 servings or more some say if you use 16oz it is too dry Top off with apple pie from Walmart for $5 I love you and you are great, but work way too hard. I love homemade also, but bottom line is we have convinces like apple pie from Walmart and then momma after dinner can sit down with the family and relax a few min. Also daughters and kiddos can all help with dishes. We don't own a dishwasher so daughter wipes down table and helps with dishes. Since we don't own a dishwasher the dishes are done immediately after each meal, no dirty dishes in sink, we wash, put on rack in sink to dry, then 2 hrs. later or before next meal we put up dishes or use them again. We own 4 plates there are 3 of us, and enough silverwear for 2 meals, we own about 4 bowls, and plurged and bought 1 more plate for 5 and 4 dessert plates, but most time you can use main plate after dinner I know the kids don't do as good of a job, but the way they learn is through our pain of having them help, telling them 15,000 times until they get it. My daughter also mops and sweeps our entire well 1,000 sq. ft. on main level minus the master. Why, she earns a couple of bucks, she does a fantastic job. Does she do good at cleaning bathrm., no, so I found her strength and go with it. She still helps with laundry, puts her own clothes up. I made it simple her socks, bras, undies are all black her choice so we know it is hers. I love that you milk, and I am glad that I don't have to-sorry way to much work, I know it is better quality milk though Another quick dinner is chicken fried chicken and chicken fried steak walmart fixing-yes more expensive but a splurge and no grease you put in the oven to bake or air fry Tacos are another good meal taco seasoning ground meat fixings Crock pot meals and casseroles are life savers on time You need to have time to sit down, read, coffee I don't see the other 5 members of the family looking stressed and tired-they all need to pitch in big time Toys 2-3 are plenty. Min. mom says-how many toys to you want to pu at the end of the day. My kiddo never liked more than 1-3 items-her last toy or clothing item is her favorite We grew up with nothing, so we think our kids will be happy with much-nope-more like time with us shocker even as teens Our almost 13 year old does not have a phone, and won't have one until she moves out and buys her own, why, it is not needed. I grew up with land line and parents never home and pay phone, so if I had an issue I walked home or figured it out Kids don't need all the stuff, parents stress over picking up and buying-we don't need all the stuff, and we don't need a big house, why you have to clean it-yuck, heat and cool it We use to share a room with siblings We had junker cars And 1 can of tuna fed a family of 5-somehow We grew our own veg., never store bought and shared with neighbors We had 4 outfits maybe and did not know thrift stores existed bc moms just shared clothes for kids with each other we shared and had hand me downs We never went to salon for hair like age 9 and age 17 I went twice We never went out to eat except our bday and it was not a fancy steak house We give our kids nothing to look forward to moving up when they move out if ever. If you had everything would you ever move out-NO-why bc life is hard Love you, keep moving, sit down once and a while and reflect, have a cup of coffee Make breakfast simple like you do-oatmeal every morning that is what we do, except we use the packets

Let me do some research. I’m just so new to canning. I was scared of pressure canning too but with the right canner the fear subsided pretty quickly.

I have never met a chicken and dumplings recipe that I liked. Don't like the taste or the texture. I will try your other recipes. Good job on the budget cost of the meals.

Ha. Well, you can tell her that I found these nail stickers in my bathroom drawer and decided I was either going to throw them out or use them, so, they were sort of, but not technically, free. 😂😂😂😂

Wait those aren’t dumplings….are they? I’ve always made dumplings as a wet batter and then I drop them into the broth and cook partially covered and partially uncovered. My mom and grandmas always made them as the drop kind too…

Recipes my family loves dorr.casserole minus dorr. per daughter 1/2# ground to 1# Rotel 1 can org. not drained 1 can mushroom soup Shredded cheddar cheese-8oz taco seasoning we love the mild old Elpaso brown ground beef, then add Rotel, soup, hand full cheddar cheese, and taco seasoning, heat up, then add to casserole dish add cheese on top then bake at 350 for 30min. We are family of 3, this easily serves 8 chips on the side if you like I cook about 2.37# or somewhat sirloin from Aldi's which is around $10ish right now all at one time, then put it in baggies, freeze, and when I need I pull out the microwave for 3 min., then add to whatever recipe I am having that calls for beef. This cuts down on mess and time, and clean the pan 1 time. You could use ground beef, turkey whatever you like. I use sirloin right now bc about the same price as ground and less water added meaning I get more meat, you could also use chicken or any meat I will say this if you like to be lean-meat makes you lean and full like veg. I have been on 100s of diets. The best was in the 80s at the diet center, and it was meat based before keto was a thing, now it was lean meat like chicken breast. My wt. on the scale was higher, but my inches were lower. I grew up with pasta and it made us hungry and it made us about 30# overweight. I know we were poor, and mom was stretching a penny, but the pasta is not good. Do I love pasta, yes, but it is like rice makes me hungrier, I eat more, and need more, the meat I can eat 1 time per day and be full.
