Excellent! My skillet is cast iron, so I used a very small amount of oil to prevent sticking. I can taste a bit a caramelized sugar in the sauce. Thank you for a delicious and useful recipe using a tasty and affordable fish.

Is there something that I can use instead of mirin? Is it optional or compulsory?

Mirin is a sweet wine that gives food a sweet-tangy taste & helps create a delicious glaze. But if you don’t have it, feel free to substitute with any cooking alcohol that’s not too strong in aroma. Rice vinegar works too if you don’t want alcohol in your food :)
