Here are the recipes:
1. Rainbow Veggie Salad
Ingredients:
1 cup cherry tomatoes (halved)
1 cucumber (diced)
1 carrot (shredded)
1 bell pepper (diced)
1 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste
Instructions:
1. Toss all the veggies in a large bowl.
2. Drizzle olive oil and lemon juice over them.
3. Add salt and pepper to taste, mix well, and serve fresh!
2. Greek Chickpea Salad
Ingredients:
1 cup boiled chickpeas
1/4 cup diced cucumber
1/4 cup cherry tomatoes
1/4 cup crumbled feta cheese
1 tbsp olive oil
1 tsp dried oregano
Juice of half a lemon
Instructions:
1. Combine chickpeas, cucumber, tomatoes, and feta in a mixing bowl.
2. Add olive oil, oregano, and lemon juice.

3. Simple Lentil Salad
Ingredients:
1 cup cooked lentils
1 small red onion (chopped)
1/4 cup diced tomatoes
A handful of chopped parsley
1 tbsp olive oil
1 tbsp apple cider vinegar
A pinch of cumin powder
Instructions:
1. Combine lentils, onion, tomatoes, and parsley in a large bowl.
2. Drizzle olive oil, apple cider vinegar, and a pinch of cumin.
3. Toss well and serve at room temperature.
4. Avocado Kale Salad
Ingredients:
2 cups kale (steamed and chopped)
1/2 avocado (mashed)
1 tbsp lemon juice
1 tbsp olive oil
Roasted pumpkin or sunflower seeds
Instructions:
1. Lightly steam the kale, chop, and place in a bowl.
2. Massage kale with mashed avocado, olive oil, and a pinch of salt.
3. Add lemon juice and top with roasted seeds for extra crunch.
5. Spinach-Quinoa Warm Salad
Ingredients:
1 cup cooked quinoa
1 cup sautéed spinach
1/4 cup pomegranate seeds
1 tbsp chopped walnuts
1 tbsp olive oil
1 tsp balsamic vinegar
Instructions:
1. Sauté spinach lightly in olive oil and let it cool.
2. Mix cooked quinoa with the spinach and pomegranate seeds.
3. Sprinkle walnuts and drizzle balsamic vinegar before serving warm.
