Buttermilk bleu was impressive. I thought it would have lost its consistency.. A testament to the fat content, i think.

should have tasted that cheese with some blaand.... my 2nd batch of that is almost clear now, after about 3 months thanks for this, i have less apprehension of opening older vac packed cheeses now. i have a couple approaching 2 years, so thanks for that again. my raw milk cheeses have been generally more flavorful, making 7.50 usd per gallon worth it just too cool to see that no aged cheese ends up bad

The price has been stopping me. Im not really a gourmet so a lot of the subtlety would be lost on me. If you put them side by side I can probably taste it. But one by one, I dont have the best palate.

Cheddar would likely be my 2nd fave (after the saffron cheese) i love me an extra extra sharp Tillamook

You're talking about adding a smoked flavour by smoking, but i was thinking about using a chipotle. Since it's a smoked pepper it could impart some of that flavour as well. They also tend to have a slight sweet flavour to them too. I'm not a cheese maker but it seems like that could be really good.

It might be a good idea to ring Australian Quarantine Department. I don’t know if they’d allow them in due to the risk to our Agriculture

If you ever get the chance, try making the Saffron infused cheese with sheep milk. Better than made with cow milk.

Oooo. The jalapeno cheddar may be my fave if it isnt rotted.... Fingers crossed..... Post taste test- mmmmmmm.... Yeah... I need me some spicy cheddar. Smoked does sound really good.

Really good to see the raw milk cheddar tasted as I couldn't find the original tasting video. I always use raw milk direct from my local dairy (not cold pressed though). That's the next cheese on my "to make" list...

Now I'm hungry. I love cheese so much. I make homemade wine with my oldest in my cellar at 10 years old. I'm really interested in making cheese and have made my first wheel recently. I bought an expensive vac packer just for this so I can age it. Keep up the good work

Gavin! My first cheese was cut with lime juice and a bit of apple cider vinegar. It is creamy 24 hours later even after hanging to drain the whey. Is that normal? It taste really good, but you can spread it and I wanted to crumble it. 🤷 Edit: that jalapeño cheddar sounds superb!

I think all those cheeses would cold smoke very well, especially with an applewood.

No they're not. They lif the paper off the work surface so you don't ruin a whole roll if you're clumsy... 😅

I cut a little off each one, then re-vac packed the rest and put it back into the cheese fridge.
