@@Siriuslyyy so I made it, my husband liked it, I didn't 😅 first of all, I just beat it with a fork...should have used mixer for the eggs, it was very eggy. But it used our chicken eggs and garden zucchini. I think I'll make it again, but for breakfast, not dinner 😅 and, I'll do half pork sausage and half ground meat, I think cut up roasted potatoes would be good in the meat mixture too.

Not me, looked it up manually the neighbors gave us some and I hate Zucchini but fuel wise it should beef up some good dishes and more healthy than flour. Zucchini bread was about all I knew it was good for, didn't realize it makes a decent pasta.

I've seen hundreds of zucchini recipes, but these are beyond fabulous! And, affordable across the economic scale if certain substitutions are made. I am a Grocery Outlet fanatic and I've already imagined using less expensive substitutions in the cheese. On the skewers, I would blend gr beef and italian sausage. BRAVO to the person who put this together; I've already share 4 times. Here in NorCal where we can have gardens, sometimes those zucchinis can get ahead of us and grow too large. The stuffed zucc recipe is perfect for those specimens.

Another kewl way is to cut the squash lengthwise, scoop out like a canoe, stuff with tomatoes sauce of your liking, top with cheese and bake. Delicious! #Yummy

You could always use baby Bella mushrooms instead of ground meat. I'm a meat eater but I LOVE mushrooms. I even love making a 'hamburger' using a portabella cap as the 'meat'. Delicious.

Look up the brand Quorn for meatless pieces. Besides, there many brands of veggies/soy products on the market. If you are a vegetarian...you should be quite familiar with

The recipes ARE PRIMARILY meat/dairy based with a side of zucchini. Asking for a vegetarian option is ridiculous as it would involve more than swapping out similar ingredients (like pork for beef). It would substantially change the recipe. It is as crazy as asking for a vegetarian based recipe to be altered to use no vegetables.
