50% Semolina Sourdough Bread is a special bread with earthy aromas. Semolina is known as semola rimacinanta di grano duro and comes from hard wheat ground to a coarser texture.
Ingredients:
- 450g semolina flour,
- 450g strong bread flour (14% proteins),
- 700ml water,
- 180g sourdough starter (50% semolina),
- 18g salt
Method:

02:30 - Mix water + flour
04:30 - Sourdough starter
05:00 - Salt
05:37 - Stretch and fold + Divide
07:18 - Lamination
09:31 - Coil Fold 1
10:26 - Coil Fold 2
10:56 - Coil Fold 3
11:20 - Shape
13:54 - Score
15:14 - Bake
15:50 - Cool
16:00 - Cut

I usually do not involve him in my weekly baking process, but this time I said why not! Now I regret I didn't do it more often but I will correct my mistake ;) 💖

Love your additional explanations, there is so much value & knowledge in them. Recently I also baked bread with my two daughters :) They had a blast and it turned out great.

Nu-i asa? Fara manutele alea 2 ce farmec ar mai fi avut? Si uite asa intr-o buna zi isi va aminti, "cum făceam paine cu mama..."

Thank you, Anca! Yes I made bread with kamut and I love its sweet taste and the flour properties when making bread. If interested, it might be one of the next recipes to film.

@@ancahart4553 Anca, cu mare drag! Mi-am facut starterul in urma cu 8 ani. Cum l-am creat, gasesti la mine pe blog www.hungryshots.com (cauta dupa Maya, asa o cheama pe maiaua mea). Daca te referi la cum o intretin, momentan o hranesc dimineata si seara 7g starter + 25g apa + 25g faina (10% secara si 90% faina de grau) dar uneori o mai pun si la frigider pentru cateva zile..

Multumesc mult Denisa! Te felicit pentru website, blog, photos si you tube channel, sint superbe, m-au impresionat la maxim. Azi te-am descoperit si ma bucur pentru asta. Ma intereseaza mult 100% Kamut sourdough bread, e ancient grain si foarte sanatoasa. Am incercat o reteta, e ok, insa mai vreau sa incerc si altele. Inca o data iti multumesc si de azi ai o noua fana.😊

you simply feed the starter with semolina instead of flour.

Si eu fac paine,am facut toata vara asta torida! Dar cu semolina n-am incercat! O folosesc de obicei in banneton. In rest,folosesc aceleasi metode ca si tine,poate doar laminarea nu-mi iese asa perfecta,se mai rupe putin foaia!

Semolina are un gust usor dulceag, foarte placut. Am văzut mai multe variante de semolina: unele mai grisate, altele măcinate fin. Eu pe cea fina o folosesc la paine. Încearcă, are un gust distinct fata de faina de grau.
