Please forgive the length of this comment, but I hope that sharing my story and thoughts will be insightful (especially for those considering this lifestyle and wondering how you make it look so easy and carefree). I've been binge watching your videos and observing my thoughts as I take in all your hard work and incredible artistic style and competence. I find myself both immensely inspired, notably envious, and tremendously sad and confused. This is providing an opportunity to reflect on my own journey and try to understand why our story hasn't turned out anywhere near like yours. Your videos look exactly like what I have been dreaming of and actively working towards for A DECADE! My husband and I finally bought land in 2019 to build an off grid regenerative homestead - it seemed perfect and magical. We moved onto it in Spring '21, so our timing is very similar to yours, as well as our age (I'm guessing a bit but it seems we're all right at the same age), climate (we're in Texas), and land size (we have 1.33 acres). We had also been converting a school bus into our tiny home before we had any idea we’d find and buy land. So many similarities yes, but I’m also seeing there are many differences in our stories (that I’m trying to learn from). Unfortunately we had to move out of our rental house and onto the land before our tiny home was ready (it’s still not even halfway done and I’m horrified and embarrassed to admit it’s been 7 years now!). That made us need to buy an RV to live in, which added another big project to my plate since I was determined to make it really nice and mitigate many of the toxic aspects of RV’s (I did not successfully accomplish this). Our land is also nowhere near as accessible or useable as yours, firstly because to get to it you have to drive up a mile of unpaved rocky roads with sharp turns and a steep section at the end. Also, because our land sits on one half of a huge hill with no access down hill except through neighboring properties, we only had easy access and use of about 25% of it. I really didn't think that would be as big of a deal as it turned out to be and even looked forward to knowing not many people would find there way back there. You seem to have great neighbors, another big difference in our stories. At first I thought the distance between us and the relatively small number of neighbors was a good thing, and many of them are nice enough. But being a small group outside of city limits ended up meaning getting to know our neighbors far more than in a residential neighborhood - and it wasn’t a great thing. Even as life-long Texans who have lived in the area of our land since 2011 and know the people well, having stubborn neighbors that don't know anything about the environment, nor care much, and are invested in the delusional American ideology of “rugged individualism” rather than true community, really took a massive toll on me. It didn't help that the 300 acres down the street was sold to a developer and began encroaching on our plans, prices inflated and suddenly all kinds of lots were going up for sale at insane prices. Nor did it help that the month we moved to the land I began experiencing chronic pain and that quickly took up a ton of my time, energy, and money (and it’s still unresolved). I also struggled more than expected with the venomous snakes, insects, obnoxious mosquitos, and extreme heat. Does Portugal not have these things?! Seriously, we couldn't enjoy just simply sitting on the small deck I finally built because mosquitos were relentless and I was terrified of us or our dog being bitten by a rattlesnake (with 4 types of venomous snakes near us surely I could find one curled up in a garden bed so I worried about that too). Our small workable area was crammed with a bus, RV, two small shipping containers (storage), and two trucks - so planning building projects was a nightmare. So were all my experiments in composting our human waste, though I never stopped trying. During these years my husband was transitioning into upper management and commuted to work 5 days a week, which meant he only had weekends to work on things with me, and yet he needed that time to rest. It was a never-ending struggle. We had been trying to get him into remote work for years but it was not happening. Even if we had, I don't think it would have been enough given all the other issues. There are so many other details that went into having this go from a hard-earned dream finally coming true into an overwhelmingly stressful experience that we ended up suddenly leaving last August. My husband got a big promotion that allowed us to quickly find a nice apartment 15 mins from our land and there’s a lot of opportunity for me to focus on healing. Even that though is not coming easy, and I think I’m the reason why. I did just learn I’m Autistic, have ADHD, and OCD. I am seeing myself and the world quite differently with what I’ve been learning. You and your husband are highly educated in technical fields and very early risers, that tells me some things right there. It also seems that before you even got land you (and Pepe) were very experienced in art and design, gardening, cooking, filming and editing. There’s also something about your skill in choosing what to do and focus on that I can’t articulate. It is teaching me more about my own process of decision making though and where I could really improve (if possible considering my neurodivergence). I should also mention that I do think America is a significant part of why this dream has fallen apart for us. My best friend of 10 years and her husband just decided to spontaneously move to Mexico a few weeks ago because they’ve been struggling to live a healthy lifestyle here too. Obviously people do it (an extremely small minority) but the grievances of those of us who find the US to be deeply problematic and quite antithetical to holistic living and community is also completely legitimate. So we are also now considering leaving the US in the next few years - no idea what we’ll do with that land which we still love and wish to protect. My big concern though is having US money that goes much farther in other places, but could contribute to gentrification (something we had direct experience with in Austin). We’re not giving up, but it is in part videos like yours that inspired me to begin with, and I have no doubt that you and Pepe are in a special category of people that are able to successfully create such a dream life. I’ve heard you say to never underestimate your creativity, but I’ll add that over-estimating it is an equal opposite possibility. I’m very competent in many things and have 20 years of experience and research that theoretically should have resulted in a better outcome for us. With so many variables (many that we can’t control), many outcomes are possible. I don’t want to discourage anyone, but I do want to share our story because most people aren’t making lovely videos about how everything went wrong. Ultimately I hope more and more people are able to be as successful as you because it would help normalize a way of living that is in alignment with how humans should be living on planet Earth, and make it easier for others to do it.

Hello! I noticed you don't eat fennel leaves. Maybe you want to try. We clean the fennel thoroughly and let it soak in water. After waiting, we wash it 4-5 times with plenty of water and let it drain. We chop our onions into small pieces and fry them in olive oil. We also add the strained fennel on top of our roasted onions. We leave it to roast in its own water. If the fennel does not soften, hot water can be added. When the fennel becomes soft, we break it over the egg. We add as much salt as we wish. Enjoy your meal after the eggs are cooked :) Ingredients: Half a kilo of fennel leaves 1 medium onion 4 eggs (may vary depending on preference) 3 tablespoons of olive oil Salt

I can tell you that the blender is a Vitamix. Very fancy, but powerful if you’re going to be using it a lot - and great for puréeing soups. As another commenter mentioned, you can use an immersion blender for soups too… (Her immersion blender is a Braun, by the way. I actually had ordered that one and recognized it - but I returned it without even using it, preferring a Nutribullet immersion blender instead…) Can’t speak to any of the other appliances, but I thought maybe you were asking about the blender :-)
