"You" is not rude. "We" might help build rapport better, but "you" is a perfectly valid pronoun. If someone gets offended by "you" then they suck at life.

I've known some sales people and others who do these things. I recognize it right away (or eventually) and it makes me feel quite uncomfortable and frustrated. You walk away feeling tricked by that Cialdini maneuver. Short term you might get what you want, but long term, it can damage trust and open communication. This just my opinion... I could be wrong.
