You can dry age cheeses and the lobster and meat but yeah can’t just dry age Mac and cheese lol

It's a mornay, you just make béchamel and add cheese. Béchamel is the roux let out with milk/cream/stock.

Umm where ? that’s easily a 150-200 dish at a restaurant. To get a dry aged steak from the butcher is at least 65 dollars

We used serve 60 day dry aged ribeye. It was one of best steaks I have eaten. You can eat the fat cap as well because it's been tenderized from the aging process. If you ever see this on the menu order it!

Looks amazing. A really well developed recipe, flavor is just worked in at every step. The surf and turf is a bit much for me though, personally. I’d probably just go one or the other.
