Galangal can be planted on ridges, usually about 30 cm apart and with 15-23 cm between plants. The crop is planted by setts (small rhizomes) with one or two buds. Plant in spring, after all danger of frost is past and the soil has warmed up at a depth of 5-10 cm. Rhizomes can be harvested most of the year.
It is recommended to let your galangal stand to get well established and grow for 10 months to a year before gathering the roots. The greater galangal variety should be around 6 feet tall and the lesser galangal variety should be 2 ½ - 3 feet tall before harvesting.
Galangal should be ready to harvest in approximately 160-190 days. Rhizomes are ready to harvest when they are large enough to eat, and can be harvested as needed, or all at once at the end of the season. Harvest individual rhizomes by gently digging to unearth them from the soil.
