With the strawberry pastry (2nd)…after brushing with egg wash, sprinkle some sugar on the dough….will give the dough a nice crunch. .Do that with all the sweet pastries

Recipes: #2,#3, I would bake the “shells, first, THEN ADDED THE FILLING!! #2: Personally, I would sub out the cottage cheese, for whipped and lightly sweetened cream cheese. #4: Question for the “bakers” out there. At the temperature she is using, is 30min enough time to fully cook the apples?? #5: Personal preference-I don’t like baked, mushy tomatoes, so I would just make these “cheese” only. #7: Again, personal preference-I would leave the sesame seeds off. I MAY brush the tops with melted butter, and shredded white american, pepper jack, provolone, or other cheese. (However, definitely NOT mozzarella!!)

I agree with your points. I also don't see the need to cut circles out of the dough. Pastry is precious. All of the folds look like they could have been made out of a square. Why lose that part of the pastry?

Agree it's odd to add egg wash after filling with fresh fruit -- even if careful to brush mainly the pastry, some is going to get on the strawberries or peaches and no one wants to taste that even after baking. Apple timing depends on the type of apples you use - boring sweet apples could bake in 30 mins, but proper tart cooking apples might take a little longer. More herbs with tomatoes definitely.
