Cook Island Donuts Recipe
7 Ingredients for the Perfect Cook Island Donuts
• 4 1/4 cups of all-purpose flour + 1/4 for dusting
• 3/4 cup of condensed milk
• 1 sachet or 2 1/4 teaspoons of yeast
• 1 cup of warm water
• 3 tablespoons sugar
• 1 egg
• 1 tsp salt
• 5 cups of oil for deep frying
Steps
1. Add yeast to warm water and stir to combine, put it aside for few minutes
2. Sift dry ingredients together in the bowl of a stand mixer or a large bowl of your kneading the dough by hand
3. Add condensed milk and egg to the water and yeast mixture and stir to combine all the wet ingredients
4. Add both dry and wet ingredients and use a spatula to combine
5. Knead dough with stand mixer for about 10-15 minutes and keep adding the last two tablespoons of flour until the dough comes off the sides of the bowl
6. Bring the dough out and knead it a little then put in an oiled bowl
7. Let it stand to proof in a warm area for one hour
8. Release the air by punching the dough and divide them into donut even sizes
9. Roll them out and let it proof again for 30 minutes
10. Heat up the oil to medium heat and start frying them until they're cooked and golden brown for about 3-4 minutes on each sides.
11. Serve hot and enjoy!
