Cook Island Donuts Recipe
7 Ingredients for the Perfect Cook Island Donuts
• 4 1/4 cups of all-purpose flour + 1/4 for dusting
• 3/4 cup of condensed milk
• 1 sachet or 2 1/4 teaspoons of yeast
• 1 cup of warm water
• 3 tablespoons sugar
• 1 egg
• 1 tsp salt
• 5 cups of oil for deep frying
Steps
1. Add yeast to warm water and stir to combine, put it aside for few minutes
2. Sift dry ingredients together in the bowl of a stand mixer or a large bowl of your kneading the dough by hand
3. Add condensed milk and egg to the water and yeast mixture and stir to combine all the wet ingredients
4. Add both dry and wet ingredients and use a spatula to combine
5. Knead dough with stand mixer for about 10-15 minutes and keep adding the last two tablespoons of flour until the dough comes off the sides of the bowl
6. Bring the dough out and knead it a little then put in an oiled bowl
7. Let it stand to proof in a warm area for one hour
8. Release the air by punching the dough and divide them into donut even sizes
9. Roll them out and let it proof again for 30 minutes
10. Heat up the oil to medium heat and start frying them until they're cooked and golden brown for about 3-4 minutes on each sides.
11. Serve hot and enjoy!

Your one is very much unique. My auntys donuts, were nothing compared to others. The test for me is "how many days can it remain soft" and not hard the next day. Thats what i find with alot of cook-island donuts. My aunty (rest her soul) donuts lasted soft for 2-3 days and the uniqueness of how she prepared, cooked and drained her dough was the difference. No one ever got her recipe unfortunately. You might be on to something new here with your prep and cooked donuts, especially the ingredients of condensed milk. Im gonna give this try. Hellow Rosita, Sorry for my late response to your message. Thank you for your feedback, I really appreciate it. I agree with you on that part of having the donuts stay softer and fresher for longer. I also experience the same with others. I used the quality bread flour and with the condense milk I think the donuts stayed softer for a day and a bit to be honest. I'm also trying different techniques to see if it can achieve that goal of the donuts staying softer after 2-3 days. I need to really need to watch and learn from the Cook Island matriarchs making them they're the best to learn from. I'm trialing the Asian method at the moment in making softer buns and breads with making donuts. I'll definitely keep you posted to see how I go. Take care sister. Much love Milz and family💕💕

Such a nice recipe, I think this is the first thing I have seen made from the Cook Islands; I must have missed all the other people doing it. Glad you are the 1st for me! ☺ I'll be darned. I didn't know donuts were shaped in that way...that is pretty cool doing it by hand! Hi Nau if you watch the full video you will see how I made the wholes. It did show on the video how I made the wholes. I used an icing tip then I use my finger again spinning the donut around on the bench a few times until the whole becomes bigger. Hope that helps. 🙏🏻
