You can also make a dish from Spain called "Sopa de Ajo" (Garlic Soup). In a stockpot sauté a few cloves of thinly sliced garlic in about 3 to 4 Tbsps. olive oil until just starting to go golden, remove garlic with slotted spoon and set aside. Now add about 4 to 5 cups very dry bread cubes, chunks, whatever (just like you had it in the video). Toast them in the oil being careful not to burn them by stirring constantly. Then add garlic slices back in and add @2 tsps. to 1 Tbsp. good paprika, stir for no more than 30-seconds to incorporate then immediately add about 4 to 5 cups of chicken broth (or water if you choose). Cover and let simmer for about 10-minutes. It should end up somewhat bready/somewhat soupy, relatively thick in other words. Finally, make 5 to 6 divots in the top and ladle a raw egg in each divot. Cover, simmer and poach until eggs are done to your liking. You may add hot water to thin the soup as needed.

@@GiveitaGrow I tried making the chive pesto. It's very strong. I tried to chew on two pieces of gum, yet the flavour and smell still wouldn't go. It tasted awesome, and that's all that matters. Next time, I suggest adding coriander to the pesto to add more flavour and reduce the pungency of the spread.

This is so good to do with free day old bread. The croutons are just as good as a snack as a salad topping.

Why on earth would you put salt in the breadcrumbs?!?! 😠 Also, crostini are the same as croutons in French. Maybe you meant bruschette?

I think I would have rejuvenated the bread in the oven with a little moisture before cutting it up. Less bread dust and waste.
