Brooke, I love you. Cooking is my passion. I was a great cook for 40 years of my life. Now I am bedbound and 65 years old. My hubby tries to do our cooking. Bless him. When I have a bad day, I turn on your videos. You and I are so similar in personality and my motto has always been be kind. ❤ you are the kindest of people. I was a Hospice nurse for 15 years and I know people. Keep on keeping on, you are doing great gf!

I went to dollar tree and bought my daughter a huge pantry haul and several boxes of shelf stable whole milk. She gets WIC but never has enough milk by the end of the month. She loved it. They are set for a while. I'm blessed to be an always working OT nurse who hates to downs money on myself. So i treated her. She worked crazy hours so I'm going to help her out some freezer meals together also. They eat 95% venison they harvest and process themselves.

Most of my family is in E TN and W NC, I have kin in Cocke Co and Jefferson Co. We mountain people know how to eat cheap and tastey. I live out west now but I still live like my granny and momma taught me. People don't have to eat expensive to eat good.

I go online and check sales from all 5 grocery stores in my area, there all with in 3 miles from my home. I only buy on sale items. Started that years ago, it works well, especially when a person needs to stock up and put back for hard times. This makes easier to buy a couple of extra things my daughter likes, that's expensive, that I normally don't buy, unless there's a sale but one get one. That's usually when I try to stock up special foods she likes.

went I started up my pantry what I did us take 20.00 went to Walmart and bought many items which were one dollar or under. I did that every 2 weeks it didn't take long before I was well stocked up with soups. veggie. cereal flour sugar oat pasta and pasta sauces too etc by the way I love Walmart sloppy joe mix and it is only 1.00 a can still can't believe it has not gone up as of 2 weeks ago I bought 6 cans.

I usually buy an extra of something we always use. Except the storm prep...diff things that don't need cooked per se. Powdered Gatorade/milk. Water.

On the quesadillas if you will save 1 cup of the sloppy Joe lentils you cooked and add them to the rice mixture and some extra taco seasoning it’s a go to staple for me now!

Your meals both inspire me and bring back many memories. At one time I was working both a full time and a part time jobs to pay for childcare and my bills. Every time I stopped for gas I'd search for change to buy a small coffee. The coffee was to give me access to the condiments table. Salt, pepper, Mrs. Dash, sugar, stevia, creamers, ketchup, mustard, mayo etc etc. Yes I would take some of everything I could. Many times they were all I had for the week or a recipe. Often times I didn't have leftovers for a meal between jobs and found that I could stop at a diner and order 1 egg with 2 slices of toast & a coffee for $1.19 plus tax. Cheapest meal I could find and I took the condiments with me from there too. To this day I still have a container in the fridge for packets and a canister on the kitchen counter with all the paper packets. You never know when you will suddenly discover that the kids used the last of the ketchup or soy sauce etc and those packets saved the day.

You would be surprised how good chopped apples are in tuna salad! I also make tuna or chicken salad with a grated hard boiled egg, mayo, celery, and sweet pickles.

If you finely chopped an apple and throw it in your salad you will love it and for dressing all you would need is olive oil, salt and pep fork your liking!

For the corndogs - use the MINI muffin pans. The ones that are like baby size. It does work good and is easier. 👍👍 Cleaning your sheet pan: spray with oven cleaner. Cover with plastic wrap. Pat the plastic wrap down into the oven cleaner so that there is no air and the cleaner stays wet. Leave sit 1 hour to 24 hours depending on level of blackness and how much lack of scrubbing you wanna do. LOL 😂👍 👍

One of the many reasons that I've gotten into watching your channel is that I've been looking for ideas for meals made with a lot of shelf stable ingredients to start stocking up on for both emergencies and for camping. The less items I have to pack last minute in a cooler, that I also have to worry about keeping ice for, the better. Also, camping is a great way to test out meals we could make in an emergency situation as well as keeping my pantry stock rotated. I think it would be awesome to see you combine your amazing creativity with putting meals together and camping trips with your husband. (I'd probably cringe at the tarp idea, but tent camping is cool!) The reason we have gotten into camping in the first place it that it is the most affordable way to get the family out of the house, so combining that with budget cooking is a win win! I never thought I'd want to learn how to can, but the canned meats, especially bacon, would be so much easier to camp with than raw meat! Anyway, I think you are absolutely adorable and I love how real you are! Your videos never get boring to watch, and I've been sick for a week and totally binging them. Thank you for sharing!

@@susanjoseph236 This is his recipe from his cookbook “20/40/60, Fresh Food Fast”: 2 tablespoons olive oil 8 ounces Turkey hot dogs, cut into 1/2” thick rounds 1 Cup thinly sliced onion 1 tablespoon minced garlic 1 tablespoon chopped fresh thyme 1 1/2 teaspoons chopped fresh sage 1 1/4-1 1/2 pounds of russet potatoes, peeled and diced into 1” cubes 1 quart chicken stock or canned, low-sodium chicken broth 1 teaspoon salt 1/2 teaspoon freshly ground black pepper 1 bay leaf 1 cup finely diced tomatoes 1/2 cup heavy Cream 1 tablespoon chopped fresh parsley Heat oil in 2 quart saucepan, add hot dogs to hot oil. Cook stirring occasionally, until they are caramelized on both sides, about 3 minutes. Remove them from pan and set aside. Add the onion and garlic to the pan and cook, stirring occasionally until the onion is wilted and the garlic is fragrant ( about 4 minutes). Add the thyme and sage and sauté for 1 minute. Add the potatoes, chicken stock, salt, pepper and bay leaf. Bring to a boil. Reduce heat to simmer and cook until the potatoes are tender (about 20 minutes). Remove bay leaf, using immersion blender or regular blender( in batches) purée soup u til smooth. Return hot dogs to the soup and add the tomatoes, heavy cream and chopped parsley. Reward gently and serve hot. Note: please use caution when blending hot liquids; blend only small amounts at a time, with blender tightly covered and a kitchen towel held over the top. I am sure you can use any brand or type of hot dog you want. If you do not have cream could make a small roux to thicken it( I use bacon drippings at times). Also I use my own chicken broth and dried herbs if I do not have fresh, but I always brown the hot dogs. Just adds more flavor.

Corn soup is soo good. I sauté some onion and celery diced in some butter. Put aside. Cook your potatoes that are diced in chicken broth until partially cooked( I use chicken bouillon for my broth). Now add as much flour as you did butter to the pan you cooked the vegetables in. Cook on med low heat to combine the butter and flour( whisk is good for this),cook for a few seconds to get raw flour taste out. Now add the chicken broth that potatoes were cooked in, little at a time until it gives you a creamy soup like consistency. Add the potatoes and a splash of heavy cream or milk. Add some salt and pepper if you want...just remember that if using bouillon it is salty. This is so good on a cold day. I like my soup not thin, but not real thick. Somewhere in between. If you refrigerate any leftover soup, you will need to add a little water to reheat it on low heat. This soup is good served with crusty bread and a salad ( I make breadsticks out of hot dog buns).

If you ever have any of the chicken broth leftover from potatoes, keep to make a white gravy or pot pie out of. The more you can layer your dishes with flavors it will help keep from having to use up your ingredients and spices and herbs. If I cook bacon in my 13/9/2 baking dish, I drain off the drippings in a jar and keep in refrigerator for later uses. Then I cook my chicken and rice casserole in baking dish I cooked my bacon in. Just another layer of flavor.

I was thinking the same. My kids are not necessarily too picky. But some of things I've seen made, my kids won't eat. & Then I myself an my daughter are lactose intolerant. So that makes it harder too.

That does make things more difficult for you. My son was not picky he would try whatever I made. My niece and nephew are very picky. So that makes it even harder for you. I do remember the first time I gave Joshua broccoli. He was 5 years old at the time. He said mommy you want me to eat little trees. I said baby those are not trees. It is broccoli. So cute the things kids say. 😂

Secret to crispy homemade corn dogs…. Dip them in a mixture of flour and corn starch before dipping in the wet mix!!! Also helps it to adhere to the weenie!!! Highly recommend using the stick as you discovered! It’s best with homemade cornbread mixture… I promise the flour and corn starch will make a world of difference!!!

Its important for ppl to feel like their budget doesn't boss them around. If you have a meal planned that everyone isn't feeling. A well stocked pantry, that's ok pick something else or if you do decide to eat out or buy something special it won't hurt to do that. It's a guide line. If you don't want t eat something you don't have to.

Hey Brooke, since you like using the IP for rice pudding, you could do like I do, dump all the ingredients in and set it to cook high pressure for 20-30 min (I use about 4:1 milk to rice). Maybe less milk if not using raisins or craisins. No standing, no stirring. Easy peasy!

Oh my gosh, some of my favorite foods! Lentil sloppy Joe’s, FRIED CORN, potato soup. I also use my leftover sloppy lentils on baked potatoes (pork n beans also works). Having spices and other pantry items is a must. Ya did it mama!

How absolutely inventive,frugal and tasty ! How dare anybody criticize you ! Pox on them !..you do such a fabulous job with all your ideas ! I taught all my kids to bake bread as well as cook..I still make bread for about 25 cents per loaf and 12 tortillas for 60 cents a dozen for big flour ones ,and 30 cents for 30 corn tortillas..I also taught them to form food coops with friends and split orders...works very well..dry beans and legumes really stretch the food budget..Your videos are a huge help and inspiration !❤❤❤❤❤

I have what most people call strange recipe for what i call tuna pie ( the original recipe had you bake it in a muffin pan so they were really tuna muffins) and it’s rather tasty (don’t knock it til you try i was always taught)! 1 small can tuna 2 c cooked rice 2 T milk 2 eggs beaten 1/2 -1 c grated cheese 1 T dried parsley 1 T dried onions 1 t season salt Mix together and bake 375* Muffins 15 minutes pie pan 25-30 minutes

When we were in the military years ago! I always kept a full pantry of beans ( every kind) and rice and boxed potatoes, pastas, canned meats ( tuna, canned chicken, spam and lots of soups) . We ate fresh produce at the beginning of the month then ate canned and boxed toward the end of the month! We never missed a meal! My husband was a hunter and kept us in wild game and fish, which help the budget immensely!

This was fun. My mom made rice pudding with evaporated milk without adding water. It was delicious. My was a great cook. I miss her cooking.

You can make your own evaporated milk from powdered milk or by gently simmering milk until it reduces by 1/2. Much cheaper than cans.

How i started stocking up is with focus hope mine,other restaurants that didn't want there's, so I'm still stocked and keep on adding to my stock pile. We even get free produce,breadevery week for free brought to us in our senior building.

I love the lentil sloppy joe. I just wanted to share that my mom would fry up “ home fries” and make a sandwich out of them during Easter when we tend not to eat meat on Fridays and those home fries sandwiches were delicious.

I think the American cheese that does not come individually wrapped is a little tastier. You can get a 3 lb package at Walmart for a reasonable price. Bring it home, wrap smaller quantities in Press n Seal. It will keep for months. Good for sandwiches, macaroni and cheese, and homemade queso, etc. I think you could save money by buying in bulk some times. I would also like to see you use more whole grains. I love your videos.

One of my Mom’s favorite stretch recipes is Hamburger Stew. Just hamburger. Onion, carrots, potatoes, salt, pepper, Worcestershire sauce, tomato soup, can of V8 and her secret, a can of bean and bacon soup. Makes a huge meal. We serve with saltines and slices of cheddar cheese on the side. Adjust amount if meat and cans of soup to size if your family. 1lb if meat and 1 can each with a can or two if water made dinner for four with seconds or lunch. It freezes well too. It’s that Bean Soup that makes it smoky and yummy.

I take lentils and some pasta and season it up with garlic powder, onion powder, salt and pepper. cook the lentils really soft. add your pasta and add 1 teaspoon of margarine. yum yum yum!!!!! sometimes I add a 1/4 pound of hamburger or 1 pieces of chicken legs.😋😋😋😋😋

Over the last week I have been binge watching your budget cooking. I like how you include the grocery haul before doing the actual meals. Because of different areas having different price structures, I think it would be kind of helpful if when you are telling us what you bought if you would include the price of the item. I think this would be really helpful when people are looking at a video that is older to see just how much food has gone up. (I realize that you can't go back and update the older videos, but I have never really know a business to lower prices to the price of years ago ((Unless they have overpriced something to the point people just won't buy it)). In years past, I always tried to keep a well stocked pantry, and would cook mainly from that, and new purchases would mostly be of items that were on sale. However this year brought severe changes, which resulted in me giving away a lot of items that I had stock piled, and am now trying to rebuild. As you could imagine a lot of basic items are causing sticker shock, some being more than double in price compared to what I had stocked them at. There are many items I refuse to buy, because of the current prices, and perhaps this is because I am older, the new prices just do not justify what you are getting. (And as I eluded to earlier) I feel that if enough people refuse to buy certain Items it will force some items to come down in price. Anyway, keep up the good video making, and please consider including item prices. Thanks, Ed

I don’t eat much Sea Food. I do eat a Tuna Sandwich some times but I have never eaten Cooked Hot Tuna.

I make my creamy rice in the oven I use the recipe from a popular cookbook here in Australia called " 5 Ingredients " it calls for 1 litre of milk 2 tablespoons of brown sugar, vanilla and 1 cup of rice and you cook it for 2 hours on low in the oven. Thank you for the great content please keep making realist budget videos.

I thought you did FANTASTIC! If you have never tried it take leftover mashed potatoes cheese in corn tortillas and pan brown like soft tacos use salsa or taco sauce makes a TON from just a little potatoes so good!!

I always keto my potato skins in water in a jar in fridge and when ready ti use, drain , blot off water, fry up and top with Parmesan cheese or cheddar and bacon pieces like tater skins! Delicious !

Make a stew. Cube up the tenderloin, In a bowl, flour seasonings, add the cube meat to the flour mix. Add a bit of water and oil to a med pot. Add the meat covered in flour and seasonings. Add some broth, can of tomatoes, cubed potatoes, onions, carrots, celery, salt and pepper. You can also add corn. To thicken, add cornstarch, Simmer all day. The meat will be tender. Two nights dinner.

I was so happy to see the pink salt and the pure cane sugar at Dollar Tree. I have gotten over my fear of buying food at Dollar Tree.I made the beef stew from the other video over the weekend, it was delicious. I am keeping that one in my head for the future. It was so easy and so good. 🙂

At Walmart 4 pounds sugar for $2.99. Same quantity from Dollar Store $5. Dollar store almost always costs more! Please check prices before buying. We go through 40 pounds of sugar a year so buying at Walmart saves $20/year. It all adds up. Dollar store spices are also very expensive when you consider price per ounce. Cheaper places for spices are Costco or ethnic grocery stores especially Indian or Mexican.

@@happycook6737 I don’t shop at Dollar General or Family Dollar, they are always more expensive. I will shop Dollar Tree, they are cheaper. Regular sugar I get at Walmart, I buy the 25 pound bag because it’s cheaper to buy it that way. I make alot of sweet tea, so it makes more sense for me to buy it that way.

Jiffy mix maybe good for the corn dogs. Add a little sweetness and shave a few cents off as well.

I know this is an older video but I really wanted to comment. Since I’ve found your channel, I have binged watched it. When I saw you take the potato peels and bake them for a snack, it really hit home. My mother grew up in a large, poor family. She would tell me how she did these with the peels when they were really hungry. Thank you for your content.

We spent a few food panty years really struggling with four kids. I remember the morning I realized I was down to absolutely nothing. I had to call a church. Ever let yourself get down to nothing. Stock up when you can. Don’t forget medicine and cleaning supplies

If you make them in mini muffin pan it's a little more red to Hot dog ratio or if you use the standard size muffin pan just put two hot dogs in it

Next time you try homemade corn dogs, I suggest trying a pack of hush puppy mix. It is pre seasoned with some onion flavor and the hush puppy mix is made to be fried. I think the hush puppy mix might give you better flavor and texture than the cornbread mix.

This was the best budget video's I have seen and been looking at them for a while! Thank YOU!!!!! Your family is awesome being open minded and wonderful thankful kids!!! BTW silly Mom to Mom budget help. When I get cheap tortilla's like you did, anything I put in them my kids will eat and it's good! PB and J, PB and banana Toasted or not, cream cheese and jam, tuna/ chicken/ canned or shrimp salad cold or a melt, any left over meat and veggies with or without cheese, just add a dipping sauce, meatloaf, eggs and anything, lunch meat and cheese or veggies, rice and beans toasted, cold salads even three bean, stuffing and potato dipped in gravy after toasting, leftover meatballs n shake parm, or just leftover spaghetti and cheese/ parm or melted, lentils and rice, Obviously you get it. I just wanted to share many of the things to help someone else think about it. I never even oil the pan. Just make quesadilla's on a dry frying pan.
