71b yeast past 18%? - Finishing our Date Wine

We made Date Wine with Lalvin 71B or Lalvin 71Beast. Today we show you all the final steps to put it into storage. Aging will also take place on this one! We find every wine and mead benefits a little from aging as long as they are high enough ABV to be more or less preserved, usually over 10%. This Date Wine sets records for ABV for 71B though. Pretty Amazing. We've seen Lalvin 71B outperform it's alcohol tolerance several times now, but this one tops them all for ABV.
