What is the purpose of the mayonnaise in the first one?

Adds moisture and gives lift. Mayonnaise is essentially eggs, oil and vinegar. So eggs for added richness, oil for added moisture and vinegar as the acid for leavening :)

@@sanjeevramkissoon5879 not at all :) the tang to mayonnaise is mostly the vinegar that is disguised by the cocoa and sugar. Really it’s no different to adding buttermilk, sour cream or Greek yoghurt

Moisture, umami flavor, richness to the palate and keeps the cake longer if you want to consume it within a week. It works, I can assure you and already tried with mashed potatoes. Give it a try if you want to :) and you don't even taste the mayo!
