I actually quite like doing practice properly. I like to make my experience on the F1 game as realistic as possible, and practice is a big part of F1. I also find it necessary to build up my speed and fine-tune setups - if I went straight into qualifying I would be at least 0.5 seconds off the pace. Another factor is that I love driving most of these tracks in the current cars - Suzuka for example would not feel as special to me if I only did qualifying and the race.

I think he meant don't fast forward to the end of the session. You can fast forward in the middle of the session, just not till the timer runs out. Fast forward to 2:30 left, then go out for a flying lap. Or fast forward to 5 seconds left and wait it out.
