For learning start with NodeJs, it is easy to learn as compared to Spring Boot. Still, due to this reason most people are becoming nodejs developers that's why finding job in Nodejs is bit difficult because most companies find experienced people also the pay is less on the other hand Java developers are less. Hence, companies often hire these people at good salaries, and finding a job is not difficult even for fresher if he has created some good projects and skills. But one thing for sure is that if you are leaning NodeJs make sure to be really good in that framework as well as frontend framework because most companies if they are hiring for NodeJs they also want to be really good in frontend but that's not the case with java, they just want you to be good in java backend
