What watch is that you showed at 1:23 ? Do those maps work with no 4g as in offline mode available or?

Garmin Fenix 6X Pro. The maps are stored on the watch, and the watch has a GPS receiver built in, so it'll not only work with no 4G, it'll work with no phone. The watch is pretty big, if that puts you off, the 6 Pro is smaller, and the 6S Pro is smaller than that, with all the same features - the only difference is more battery and slightly less pixels on the display. RRP is about $1250 but for the past 6 months or so prior to the Fenix 7 coming out, it was widely available for about $600, and that's what I got it from JB Hifi for. Now that it's been superseded by the 7 it's being sold for full price!?

Sure, you'd probably be fine, but getting a waterborne disease is part of the "authentic experience" I'm happy to skip. You can never really know what's crawled into that tank and died, or what's ended up on the roof, and been washed down the gutters.
