ILAYADA RECIPE
1.Dry roasted riceflour 1 ½ cup
2.Grated coconut 2 ½ - 3 cups
3.Grated jaggery 1 cup
4.Salt 2 pinch
5.Cardamam powder ½ - 1 tsp
6.Cumin crushed ½ tsp
7.Plantain leaf pieces 15 - 16
8.Ghee 2 tsp
PRPARATION
1.Mix the flour, salt, ghee and boiling water into a chapathy like dough
adding water carefully.
2.Heat the jaggery stirring well to melt, let dry a little, add the coconut,
stir well to remove moisture,(60 - 70%) add the cumin and cardamam
and set aside to cool. Filling ready.
3. On a fire sauted leaf spread a lime sized ball of the dough as shown
leaving the 4 sides free. Place another ball of the filling
on one half of the spread dough of the leaf fold as shown. Set aside.
4.Steam the ada 15 - 20 mts well, or till done.
Serve after it cools down only.
