My friends call me "the hippie martha stewart" because I'd always organize camping trips for groups and cook food they would normally not expect when camping. Secret is to use some containers or bags to cut up and marinate meats all day in and then you can throw them on skewers with veggies or straight on the bbq in the evening and relax with a beverage when they are cooking. Whole corn on the cob is a natural but just peel back the husk leaves (don't detach them) and take all the corn silk off (makes a good medicinal tea, btw...so ya might save the silk!) and then fold the husk back up over the cob. Soak in water for a little bit and then you can put on grill over hot coals or on hot coals and be sure some kernels get nice and toasty brown. We also make things like picnic salads, potato, bean, quinoa tabbouleh, etc. to eat on the side. For dessert there is nothing like fresh chilled melon to eat after you've been soaking! Or just eat like Mexicans...rice, beans, corn tortillas and whatever you have, queso or veggies or meat, to have with it. Lots of veggies are great grilled, btw! Peppers, and even onions and tomatillos/tomatoes...then chop into a salsa!

@@TheBrownVanlife Thank you! Just trying to work hard, put away enough for a small used, RV and get rid of stuff right now. It's my adult son (I'm in my early 60s, he's in his early 40s) and I so the small van thing won't work for us but thinking a use c-class under 30'. Tolontongo is definitely an achievable goal after working our way down the mainland coast and through the mountains... No pets anymore and we are (not easy) staying that way for a while... Plenty of dogs needing adoption in Mex when we are ready!
