I think this is just a graphical glitch. Seems like it flickers if you pass the stage and not if you lose and get sent back into Infinite mode, maybe because player sprites get reloaded for entering a new stage and so it causes your sprite on the challenge page to reset as well? If you're close to killing a boss but are narrowly failing you can just hit Challenge a few times until you get good RNG for evasion/crits and win anyway, which is what I think is happening in the background.
