For those who don’t know, the reason why Marley’s jaw is bound up is because, to keep the dead man’s mouth from opening into a gaping maw, they’d bind the jaw shut with a handkerchief or a piece of cloth. Today, modern funeral homes stitch the mouth closed with metallic suturing used just behind the lips. A good case example of the former tradition was uncovered during the exhumation of three of the crew members of the Franklin Expedition. The cold environment not only preserved their soft body features, but it also preserved the clothing they wore as well as the cloth that was bound around their jaw. John Torrington, the most well-preserved of the three, has the most visible example of this, which you can see online (if you dare wish to look). This is also why, in all of the adaptations, we see Marley still wearing the jaw binding as _that_ was the last image Scrooge had in mind of his old friend. It is a Memento Mori - a reminder of death - that is used to remind Scrooge of the reality of his own mortality and what his fate could be.
