A classic Guyanese dish, Baigan Choka, Tomato Choka, Spinach and Paratha Roti

Ingredients for Roti
4 cups of Flour
2 tsp baking powder
2 tbsp ghee
1 1/4 water to knead the dough
Baigan Choka ingredients
3 Baigan
6-8 cloves of garlic
1/2 red onion finely chopped
1 green onion finely chopped
1/4 of a hot pepper
1 tsp salt
3 tbsp coconut oil ( any oil can be used)
Tomato Choka ingredients
3 tomatoes
The green leafy part of 1 green onion finely chopped
1 head cilantro finely chopped
1 piece of hot pepper
1/2 tsp salt
Spinach ingredients
2 bundles of spinach
1 clove of garlic
1/4 tsp salt
