I made four deployments to Misawa Japan and loved the local cuisine. Yakisoba is a favorite of mine! I haven't found anything comparable in my area of US.

Great clip! I have had okonomiyaki in Hiroshima and Osaka the debate of which is best is undecided for me, but maybe I tend to lean for Hiroshima, with oysters. Also in Fukuoka where I lived for years. This looks absolutely great. I love mountain potato, which is translated to "long potato" in the clip. It is not a potato, it is a variant of yam root, very sticky, but delicious. Have made many gratins with this. One day I hope to get up to Ishikawa and hopefully visit the restaurant. Arigato!

Hiroshima is my favorite, especially when prepared by a top chef. So many good memories of my time in Japan. After a long day at work often only the noodle shops would still be open. Yakisoba noodles and gyoza, or just a good noodle soup - I use to call these my Japanese comfort foods.

鰹節といって鰹をカチカチになるまで水分を飛ばし旨味成分ができったところをすると木の皮のような得体のしれない食べ物です。あの粉は加工しました
