I am not a fan of Hamilton but one of the occupational therapists where I go for hand 'tune ups' was playing this and asked me 'Frankie, does this song King George III sings, "You'll Be Back" remind you of the Dave Clark 5?" if you dont own a sous vide (like me), check out this recipe from death & co: in a container, combine 3 cups of cubed pineapple (preferably fresh, not canned) and one 750mL bottle of flor de cana extra dry white rum and stir well. cover and refrigerate for 5 days, stirring daily. strain through a cheesecloth lined sieve. also for best results, youll wanna store your infusions in the fridge to keep the flavors intact longer.

Every time I juice a pineapple I add the cores to a jar with half a litre of Havana Club. Mainly I do it just to reduce wastage.

If you want to do it like Plantation does, they take half of the currently aging rum and separate it into a barrel with pineapple husks (not the fruit), if I remember correctly, and let it mascerate for an additional fee months, then they rejoin the pineapple'd rum with the original to let it marry for a few more months before bottling. Note: the smaller the vessel, the quicker this effect happens. If you're using a 3-5 gallon barrel, we're talking a week at a time between sampling the effect. If you want to do an infusion like Leandro is talking about, you will use the pineapple fruit in a container with your rum. Rapid infusion would have you use a pressure vessel (recommended iSi infusion kit) to rapidly increase and decrease the pressure, the change of which would impart the flavors into your spirit. If you want to do a standard infusion, you will need to seal the rum and pineapple in a bag or other air-tight container and heat the contents (preferably through sous-vide) for a few hours. Note: the hot infusion method will likely see some alcohol loss due to evaporation. Rapid infusion should see minimal loss due to added water from the pineapple, but it will still drop some.
