I use a large disposable aluminum foil pan with a little water in it on the lower grate and put the meat on the grate above it. Catches all the grease and keeps the smoker clean. Only have to wash the cooking grate before each smoke.

PIT BOSS needs to update the SMOKE IT APP and the firmware via Wi-Fi! No excuse not to! I have this exact same model and it needs a tighter temperature gradation!

Temperature settings are, 150, 175, 200, 225, 250, 300, 350, 400, & high about 420.
