Here is the lasagna recipe Mary talked about: www.drmcdougall.com/recipes/spinach-lasagna/
The BBQ Jackfruit recipe: www.drmcdougall.com/recipes/bbq-pulled-jackfruit/
Mary McDougall IS the original whole-food, plant-based vegan and creator of thousands of low-fat, oil-free, vegan recipes.
The McDougall Program is a leading medical program that heals chronic illness through professional medical care, world-class education, and ongoing support for people transitioning to a starch-based lifestyle.
In addition to raising a family, she is the author of 13 national bestselling books, 5 of which were her own cookbooks. She starred in many cooking videos and TV shows, is the co-owner and operator of McDougall Adventures, Inc. and is an instructor of the McDougall Program.
Mary is a retired nurse, homemaker, co-founder of the McDougall Program and co-author of 13 national best-selling books. Over the past 50 years, Mary has worked with Dr. John McDougall caring for people using diet therapy to restore health and has created over 3,000 health-supporting recipes. Mary is best known as the inventor of low-fat, vegan cooking, and loves sharing the practical methods of turning the kitchen into a health-builder for the whole family. Prior to 1977, when Mary began her work in the kitchen, low-fat recipes contained skimmed milk, white meat, and other unhealthy ingredients and vegan recipes were loaded with vegetable oils. Now there are dozens of websites and cookbooks that focus on the McDougall health-supporting way of eating.

We’ve been living WFPB together since my husband’s prostate cancer, I was eating this way for 5-6 years first. And I transitioned slowly as I wasn’t sure how to do Plant-Based. But I figured it out. In the beginning my husband did not even want to try what I was cooking and then he said that it gave him loose stools. So I went at it slowly for him and then he had no other digestive problems. He enjoys what I cook and I haven’t used too many recipes as I had cooked without recipes for years saying “this would tasted good” and it was. There are ways to keep food moist like adding sautéed onions with mushrooms over a baked yellow potato. I put my homemade salsa on many things or add some fat-free Italian dressing on the potato and a seasoned pepper. Tastes good. My digestion is so much better. My husband likes putting butter on things yet and he takes a blood pressure pill to make up for his stubbornness. But he is mostly there and his health at 70 is so much better than most all men at his age. I take no meds unless I have an infection. I am 69. I save the water leftover from cooking vegetables and then use this to add the feeling of moisture that the oil gives food. It beats cancer as that is what my mother and sister died of. Can’t bring them back but I don’t honor them by eating myself to death.

@@angelafischettifitness Or her own PBS special, like Fuhrman and Barnard did some 15 or 20 years ago, during the PBS fundraising telethon. People who donate a certain amount would get Mary's cookbooks, McDougall's lectures, and for the big donors, a nice new SCANPAN. I'm going to email Mary and ask her if she'd be interested in that.

For the lady that family is not vegan, what I did, and I had four foster care kids, I made vegan for me then added the sides, I make vegan spaghetti sauce then take my amount out, then add meat to the batch left for them. I would cook the meat a head of time, and freezer bag it Same with chicken, I cook it ahead of time. They did not know the difference. Tacos are good. I got an air fryer toaster oven, which helped a lot. I never made a big deal out of it. I'd cook there favorite things and meals, same with soup and big French bread or homemade bread with. Add meat to it after it was cooked and took mine out. Funny thing is many times they eat my vegan version and I have to make more for me. They request my vegetable ABC soup recipe for a meal. Also, Mary Lassana.

Nice interview. Mary was being modest when talking about the difficulty in learning to fly a plane. My husband and I took flying classes. He did very well. I found it extremely difficult. There's a lot to learn about lift, thrust, drag, weight, airfoil, airstream, navigation, weather formation; FAA regulation, just to name a few things. I mean, the classes are overwhelming. I give her a lot of credit! I gave it up, while my husband did finish and was good at it. But I said "never again;" it's just not for everyone. But anyhow - I love her and John's books and Mary's recipes. I too love the lasagna.

I'm the only vegan in our house. There is me, my grown daughter, and my husband, and sometimes the boys visit. We all do our own grocery shopping and cooking. When my boys visit, they either cook for themselves or my husband cooks for them. I end up doing a lot of dishes, but it works for us.

Re: cooking pasta, Moon St. recommended cooking the macaroni and water together from the start. The bringing to boil happens fast, and you just have to guess at the plus-amount of water. I would like to ask Mary to create an Indian flavored -- and perhaps a Mex-flavored one also for a -- Kale-and-other-leafy-greens soup, something brothy and without beans..

This was fantastic! What an incredible woman! Thanks Chef AJ for doing this and also to Mary for sharing so much. Oh I chuckled at the story about the food almost running out! We had a similar experience in Melbourne when Neal Barnard visited for a conference. Clearly the catering place didn't understand calorie density because we were all told we were "so greedy" when the food ran out - they provided such small portions and allocated less than 1 potato per person!!!!! For those in Australia, the Mission Wholemeal Pizza bases are oil free and available in grocery stores :-) My family love them, but I'm flour free, so potato crust for me.

Mary has a great attitude and can do approach. I love cooking I left home when I was young and my mother did not use much oil or any animal fat she steamed vegetables. I love green beans - my late mother said the reason I grew so tall was because I ate so much green beans. Which I loved and eat a lot of. She used stainless steal Cookwear, and made vegetable juices before you could a descent juicer. When I was young.

Omg 😂 Mary is so funny , thank you for this . My name is Mirla from Canada 🇨🇦 and I heard about Dr McDouall about 2 years ago and I went plant based right away cold turkey but my struggle is going out for dinners. My husband is not on board with me . I have stopped cooking for him because I refuse to cook with oils and meat and all that other processed foods so when I’m at home I eat well, I prep my meals but because he has to cook for himself he likes to go out and that’s where I give in and go with him. It’s been a struggle . I have lost 30 pounds and need 20 pounds more to go but I am stuck ,I am 50 years old and when I go out I don’t feel good even when I try and pick plant-based foods because everything has oils in it. I know the right thing to do but it’s hard when your partner is not on the same page as you, do you have any advice ? And thank you 🙏🏽 for everything that you guys do ♥️

My husband doesn't eat like I do and I don't know how to cook meat so I make my meals and he makes his meals. When we go out I mainly eat salads. Going to steakhouse restaurants are usually the easiest because I can get a plain baked potato, steamed broccoli, and a side salad.

I bought the 12 day book when it came out after seeing it on a special table for new books - the cover is what attracted me. I was 24? Anyway... I read the recipes and made none, not one. At that time of my life things like baking were still important, but I never got around to making the apple muffins. I actually thought I had to eat like in the book. Nope, not so. Later on I started cooking more "exotic'" things, read the newsletters and yet - never once made any of the recipes. The last 8 or 9 years I just go for the fast foods - simple: potatoes, oatmeal, eat the vegies raw unless I have to ccok them, l make 500 gm batched of my own beans and freeze them. I like it that way too.

Restaurants quite simply cannot afford to stay in business without the cheap calories of oil. That all-you-can-eat buffet? It's probably 60% calories from the cheapest vegetable oil money can buy. If you took the oil out the buffet, people would simply be able to eat too much without getting full, along with the fact that they'd [restaurants] be forced to use top quality ingredients for the food to taste good without it [oil].

Ancient Romans cooked with olive oil, but it was pressed from fresh olives, and bore only a passing resemblance to the stuff we can buy today. Have ever had fresh-pressed olive oil in Florence? I have, and it is....WOW! It's an EXPLOSION of flavor, and you simply couldn't use too much of it, lest it dominate the flavor of your meal. It's bright, slightly lemony, quite peppery, astringent, tannic, and packs a gut-punch of umami. I would be fine with anyone cooking with THAT stuff, simply because by its nature, you wouldn't overdo it.

@@happycook6737 Not everybody her age really cares what other people think they look like...lol I am 65 and spend a lot of time bicycle touring. I don't wear make up any more and have let my hair grow out cause I dont keep up with fashion. I look at her beautiful skin and the twinkle in her eye to access beauty. Life is too short and getting shorter all the time to worry about such things.
