Actually I find Eva sometime a little bit too snob towards American way of approaching cooking in general. After all, how many Italians ACTUALLY prepare pasta starting form flour as a usual practice? Italian towns are or are not full of questionable Japanese restaurants and horrible kebab huts?

Don't get me wrong, when it's their local cuisine and it's cooked the way It Is intented american cuisine Is great! On anorher note you are right about how Italy Is becaming more more "diverse" and sometimes less traditional, but trust me when I Say that MOST Italians are still prone to italian cuisine.

About 4 million Italians immigrated to America from 1880 to 1920. The majority (about 85 percent) came from southern Italy, where political and economic circumstances left the region extremely impoverished, so it would be the cuisines of Sicily, Calabria, Campania, Abruzzi and Molise (and not Venice) that would make their mark in the United States. After all, Americans are messing with their grandma’s grandma’s grandma’s recipes. What passes as “Italian” in the US has been an exercise in patience for ITALIANS!

Nono you mean how italians inherited traditions from MEXICO! They didnt have chilies or tomatoes prior to 1500 ad! Those are native to meso america! Thats why Mexicans use a lot of tomatoes and chiles like salsas for dishes! Maybe in North mexico its more european but in south its accually very native. Problably they wouldnt be able to tell the difference because the names are europeanised

I know we gave them the tomato, quite characteristic of their cuisine. We also give to the world the avocado, chocolate and vanilla.

Well, Spain and Italy were both part of the same giant country for more than 600 years. The roots are the same. In the columbian exchange, Europeans got tomatoes, potatoes, corn, chocolate, vanilla, all beans (other than ceci and fava), chiles, turkeys, other stuff I forgot. Mexicans got pork and beer...

@@iseytheteethsnake6290 when tomatoes, peppers and chilli first came to Italy people nearly didn't now what to do with that, so they improvised and tried ending up creating what we now call tradition and traditional food; not only this but Italians selected and bred these plants generating typical local varieties so much so that initially when they arrived in Italy tomatoes were only yellow hence the italian name "pomo-doro" which translates into "golden fruit"

My best friend when I was a little girl, her mom was Italian and she had two kitchens as well, with a beautiful canning cellar, she called it, with rock pebbles as the floor and just wooden shelves meticulously filled with everything you can imagine that could be canned. I had to chuckle a bit, growing up all my Italian friends and family had 2 kitchens. I remember a lunch in Italy ... Dandelion salad, homemade cold cut meats, and Parmesan cheese chunks. Sometimes rabbit would replace the cold cuts. Nonna would sauté the rabbit in olive oil then add rosemary, loads of garlic, and white wine. Nonna was from Lake Como. Nonno was born in Pescara.

I was born in Pescara, but when I was young, I had a girlfriend from Reggio Calabria and her mother made it with loads of garlic. They would leave the cloves whole. Again, just a particular recipe.

@@robstlace4599 The typical rural Tuscan way my family makes "brick chicken" is with tons of rosemary and loads of garlic in whole cloves. Some of the garlic inevitably gets burnt. (all the youtube recipes are wrong) Rabbit would sometimes be cooked the same way.

@@gregmuon Yes, very similar recipe, minus the cloves. They would use plenty of crushed black pepper. After browning the rabbit in olive oil they would add the wine, garlic, and lots of fresh rosemary. When the wine cooked down to nothing, the rabbit was ready.

I grew up in south San Francisco,at that time the town was mostly Italian. Everyone had two kitchens. In the basement of our house we had the second kitchen where all the neighbor women women would make pasta,this is where I learned to make pasta.my wonderful grandfather also made his own wine in the basement,there was a huge wine press and so many barrels for the wine! Angelo my grandfather was a Shepard in the Italian alps so we also ate a lot of polenta.the men in the family would use the kitchen in the basement to pluck the ducks and pheasants and my mother and her sisters would make a stew of the foul and serve it with polenta and mozzarella.those days are gone,but you and Harper have brought back all those memories of a wonderful Italian childhood.thank you both for keeping up the tradition of making the most wonderful food in the world!

That's just like my Portuguese immigrant family. The basement was used for making the wine and preparing the chickens and especially pig. Every year in during the fall they would take a pig into the basement and use every part of it for food. Blood sausages, spiced sausages, pork rinds, cured meats. They would also pickle vegetables. No food went to waste

I love everything about this video. The food that is so simple and so good. A hike up a mountain after breakfast with the one you love. Olive trees, fresh oranges. I took a deep breath just watching. A tour of a town steeped in wisdom: it was either the Madonna who kept the people safe from the plague or their belief in her, it doesn't really matter which, they were safe. The community getting together to wash clothes, and in ancient times make their grain. Maybe 'rona is telling us this: enjoy the simple pleasures, this is the way life should be. Eva, you are an artist whose medium is life and food; Harper, you are an artist whose medium is life and storytelling.

Living in Munich, which is often called Italy's northernmost city, I always thought that the kind of Italian food we can get here at restaurants or cook for ourselves is the real deal. After having watched several videos, it begins to dawn on me that I might not be quite correct. Much of what I eat here might be "Italian style cooking" at best. Anyway, I keep learning from your videos almost every day. Keep these videos coming! :)

I have never heard Munich called italy’s northernmost city! But having been to both places that makes a lot of sense. Munich is truly one of the most beautiful and warm city’s I have ever been to. Really reminiscent of Italy

@@luked4043, it is called that for several reasons. First, many buildings were built by Italian architects that have been hired from South of the Alps. In fact, Munich's first opera house was built on the insistence of the Italian wife of some elector back in the 1650s. From 1810 on, Turin chocolatier Luigi Tambosi opened his famous café in Munich -- and it's still in business! In 1890, the first Italian restaurant, the Osteria Bavaria (now Osteria Italiana) opened in Munich's university quarter in Schelling Street. Of course many more followed after WW2, when many Italians were hired to help rebuild Germany after the war. Of course these workers did not only enrich the culinary scene, but also added more than just a pinch of the oft-quoted "dolce vita". Also, many Munich artists, musicians, writers, and other cultural figures drew their inspiration from Italy. That is probably the most important reason for Munich's nickname, because it is culture that forms the way of life of a city most significantly. I don't know if I would love my city as much as I do without all those Italian influences. Maybe it would be just another Bavarian provincial town. Which would be okay I guess, but I like my Italian Munich better. :)

Dasa, Calabria, from the Greek word for forest, dasos. Greek was spoken in this village until the mid-16th century. The Greeks and their culture were absorbed by Roman Catholicism, but the Greek light still lives on through Eva.

Every real Italian home has 2 kitchens!! We had a downstairs kitchen for everyday meals. The upstairs kitchen was for holidays or more formal dinner parties! LOL I love the way Harper’s eyes roll to the back of his head when trying a new dish... quickly followed by a loving look over at Eva 🥰

My parents are originally from Dasa and I was born in Australia. It was great seeing Dasa again haven’t been there in years especially I fume my mother always told me stories of her washing the clothes. Loved seeing the olives trees which my grandfather owned a lot of them. Thanks for the memories and hope One day I will see you in Dasa

Hey ! No wonder I like Evas recipes so much! my heritage is from Serra...right next to Dasa!! I remember when I was a kid, also the women washing the laundry in the town laundry area of Serra San Bruno. Made perfect sense.. wish it was still going.. miss it so much

Yes, please do a cookbook. I’m allergic to dairy protein, so I will have to do things without cheese or find a substitute, but this 25% Italian lady would love to start cooking some more authentic Italian recipes.

Quick tip: I discovered that tofu can be made with any legumes, and homemade tofu can be a good substitute for fresh dairy cheese

Artichokes boiled with potatoes is my favorite dish here in Greece.Lots of extra virgin oil in the end stired with lemon juice on top.

che poi in realta quel brand di proteine è il top, ma non è sostitutivo di un pasto, è solo un aiuto ad un certo tipo di allenamento, che nel video e nella loro giornata non c'è, anche se loro in realtà in Usa sono fissati di palestra e body building e si vede
