been wanting to try a hot hideout and this video has convinced me to finally try it. definitely very singaporean in terms of ingredients from what i see, which isn't a bad thing! they know their target audience and are sticking with it.

frying stuff may sound easy but ALOT of places dont do it even for yong tau foo. its all about the details and just that extra effort. great content keep it up! subscribed and liked!

Oh this! I actually tried this in NTU and I liked it! The lotus root chips and scrambled egg are must haves. Definitely not conventional, but I guess I think of it as Mala + a few pretty good side dishes. I find it easier to reconcile if I treat the fried lotus root chips and scrambled eggs as other sides, so I wont be expecting that my chips have no mala sauce, in fact I don't want the mala on my chips in case the mala sauce makes the chips soggy lmao. I guess this also means their mala is pretty average, because I only went back for the sides instead of the main 😆

I like the dip the fried stuff into the soup, it helps to retain the crunchiness while at the same time being a little soft - a play on texture. As for the sauces, usually they have sesame sauce too which you can put in a separate bowl and add some soup to it to make it into a dip for your fried stuf too!

Piao Xiang Mala at 313 Somerset is one of my favourites but it's currently closed for renovation and will be opened back in mid Oct. Another one is the Mala stall at the Westgate Food Junction.

Piao Xiang is the first mala Stall in Singapore! Yes, the same story that Alderic mentioned in first episode about the Food REpublic chef that "conned" FR to send him to China to learn how to cook mala lmao.

i think people normally eat the deep fried foods with malatang (or at least people i know), hence avoiding that issue you mentioned!

thanks for featuring this new joint - saw it on social media and it's nice to see they're more than just marketing. If you're looking to experience high-end Mala (going back to Cut during your steak series) as a benchmark, it's definitely worth checking out Shisen Hanten - I think it's the only Michelin-starred Sichuan restaurant in Singapore, peaking at 2 Michelin stars. The cooking is decidedly Sichuan - while there's not MLXG, their signatures include mapo tofu and laziji, both of which I thoroughly enjoy. They incorporate some really nice Japanese ingredients into the cooking, such as a Miyazaki fried beef with mala, or Mie oyster cooked kung-pao style (this one got me - I never eat oysters but loved this). Sure, it's a little pricey, but definitely cheaper than Cut, and honestly most of the steakhouses - set menus including the mapo tofu start at $118, but they also offer a la carte options so you can go just the mala items.

oh, just realised they closed for a bit earlier this year for a revamp, but judging from their social media, they seem to be set to reopen not too long in the near future.

i would recommend Ascend Vegetarian, is a vegetarian ma la xiang guo. Not the oily kind, alittle bit wet and healthier that why i like to eat there when I have craving for ma la xiang guo.

You are suppose to dip the fried ingredients into the soup. Put there to soak the soup so that there’s flavour. It taste sooo good. You can think of linglingjuan in hotpot.

You should fly to ChengDu and Chong Qing to get the benchmark for Mala. and try the original creator of Mapo Tofu at Chen Ma po restaurant in ChengDu. Best Mapo Tofu i've ever ate

Apart from the vegetarian Green on Earth recommendation earlier, a meat eater favourite would definitely be Hot Hot Pot in Westgate. They do something different to their MXG but its hard to point what it really is - just must try to feel it haha! Worth it.

Not that I know how MLXG is supposed to taste, IMO it feels like they just added a bunch of stuff that "Gen Z" likes and mash them together. Not that there's anything wrong and I do appreciate their innovation (adding scrambled eggs, fried ingredients separately), it doesn't seem to have a fusion. I love it each component individually but together just feels like an addition rather than multiplication. MAYBE i'm just an old fart who likes everything "the way it should be". Ate it a few times, it's like, it's alright but................somehow it doesn't wow me. Special shoutout to their scrambled eggs, it's to die for

Tried once, the ingredient is very bad. The choices are very little all like frozen cheap ingredient process food. Only their fried stuff is special and overall price not cheap.

the fried stuffs is cool. But the ingredients are definitely on the boring side of things. That numbing part seems very turn-off to me though. No comment about the soup, has never been mala tang person

Is that the standard way to order when its your first time eating at any stall? I definitely don't ask for more sauce at any mlxg because the expectation is that the ingredients will be coated sufficiently by the sauce for every order

@@darknight741 he mentioned that after he tossed the ingredients, there was not enough sauce to coat the fried ingredients. So wondering why he didn’t ask for more sauce after when that happened. One possibility which I mentioned was did he think that might be considered cheating because he wanted to judge the dish as originally presented.

I always take the food how a first timer would take it. the mala base is often not that straightforward as well, it usually gets fried with other stuff so I'm not sure if they can add the sauce directly afterwards.

Bruh why you eat their fried stuff like that? Everytime when I get their mala collagen all their fried stuff are inside the mala soup, there is no way you should be complaining that they can't be well mixed since they are soaked in the mala collagen if you are ordering it right. My order is just over $20 so should be more than yours.
