In this video, it's a Sunday Funday. Mike is going to make (and share) his favorite lasagna recipe that is perfect for the season, so we start by heading to the gourmet market. Steve tries to build a new piece of furniture. And we found something too cute at Williams-Sonoma for the upcoming Christmas season!

THE ULTIMATE LASAGNA BOLOGNESE by Tyler Florence
8 to 10 servings • time: 3 hours 15 minutes (4 HRS!!!)
1 recipe Fresh Pasta Dough (see page 27)
Bolognese
2 carrots, cut into large pieces
1 large onion, cut into large pieces
3 ribs celery, cut into large pieces
4 garlic cloves, peeled
4 fresh sage sprigs, leaves only
Extra-virgin olive oil
1 pound ground beef
1 pound ground pork
Kosher salt and freshly ground black pepper
2 tablespoons all-purpose flour
1 750-milliliter bottle dry red wine
28-ounce can San Marzano whole tomatoes
½ cup whole milk
1 teaspoon ground cinnamon
1 cup grated Parmesan
2 tablespoons finely chopped fresh Italian flat-leaf parsley
Béchamel
2 cups whole milk
3 garlic cloves, peeled
1 bay leaf
1 stick unsalted butter
½ cup all-purpose flour
¼ teaspoon freshly grated nutmeg
Kosher salt and freshly ground black pepper
1 pound buffalo mozzarella, torn into pieces
¼ cup grated Parmesan
2 tablespoons chopped fresh Italian flat-leaf parsley
To make Bolognese, put carrot, onion, celery, garlic, and sage in a food processor and process until you have smooth vegetable pulp.
Coat a large, heavy-based pot with oil and set over medium heat. Add vegetable pulp and sauté until fragrant and some of the moisture has evaporated, 4 to 5 minutes. Push the vegetable pulp to one side of the pot. Season ground beef and pork with plenty of salt and pepper, then add to the pot. Stir and break up the meat until it is brown, then dust with 2 tablespoons flour before adding wine, tomatoes, milk, and cinnamon. Bring to a boil, then reduce heat and simmer about 1½ hours, uncovered, until sauce is thick. Add Parmesan and parsley and season with salt and pepper. Set aside while you prepare the Béchamel.
To make the Béchamel, set a large saucepan over medium heat.
Add milk, garlic, and bay leaf and bring to a simmer to infuse milk with herb flavors. Set a large saucepan over medium-low heat. Add butter and melt, then sprinkle in flour while you stir with a wooden spoon. Once all of the flour has been combined with the butter, grab a whisk and gradually pour in the herb-infused milk, passing it through a sieve as you go to strain out the aromatics. As the sauce thickens, continue to whisk over low heat, then add nutmeg. Season with salt and pepper and set aside to cool slightly.
Preheat oven to 350°F. To assemble the lasagna, cut the hang-dried pasta sheets to fit a 9x13×3-inch lasagna pan; set the pasta aside.
Coat the bottom of the lasagna pan with a thin layer of Béchamel. Top with a layer of lasagna noodles, trimming noodles to fit as necessary.
Top the noodle layer with a layer each of Béchamel, Bolognese, and mozzarella pieces. Continue with the layers of lasagna noodles, Béchamel, Bolognese, and mozzarella pieces until you have three complete layers, finishing with mozzarella. Shower the top of the lasagna with Parmesan and parsley. Bake, uncovered, on a tray to catch the drippings) in the center of the preheated oven for 1 hour.
(If the top starts to brown, tent with foil.) Let the lasagna stand for 15 to 20 minutes before cutting.

Mike, you can absolutely assemble the lasagna a day in advance, cover it, and store it in the fridge. Take it out of the fridge and let it sit on the counter for one hour, then bake it as normal. You may need a little more time in the oven. I enjoy cooking with you and seeing all your Williams Sonoma swag! Thank you for sharing with us! 💜

Italians call onions, carrots and celery blended soffritto and yes you can make more and keep it in the fridge for other recipes. I always make it and make more for any other sauce. @@TheMagicDads

Lasagna looked amazing! I am so hungry now. You can definitely make it ahead of time and store it covered in the fridge until you are ready to cook it. I also love to put a ricotta, shredded mozzerella cheese and parm cheese in between the layers. That is how my mom made it. Can't wait until Christmas that is when I make it for Christmas dinner. @@TheMagicDads it’s different for every family but after roasting a huge turkey for Thanksgiving the last thing I want to do is roast another meat like ham or roast beef. Lasagna is easier and everyone loves it! 👍🏻😁

You might cringe at this suggestion, but when I have an abundance of bread like what you showed, I freeze it. There will always be a use for it later! Just let it thaw and then you can turn the buns into garlic bread, loaves of bread into croutons, French toast, etc.

I have visited this wonderful place several times. I recommend visiting during the Christmas holidays when they have all the different nativities in a special room, They even have a descendant of Charles Dickens doing a reading of "A Christmas Carol".

You can make lasagna the day before you’re going to use it. The flavors have a chance to marinate and it taste better.

That lasagna looks so good! I wanna try it! My mother makes lasagna a lot for our Sunday family dinner because it's one of the FEW things that everyone likes. Since my Mom is usually up before the sun, she makes it very early and cooks it when we all get there later in the day. You absolutely can do that!

Yes, you can make it a day at a time. Whenever I do mine I take it out an hour before I’m going to put into the oven. And it comes out great.

That lasagne looks delicious. Loved the way you pronounced Autumnal as Autuminal. Autumn is what we (UK) call Fall. You'll say Autumnal properly if you pronounce the T the British way. Try it, lol. Skylar looks like she's fitting in well as the new member of the family, she's beautiful. ❤

I always make my lasagna in advance. The pasta soaks up the sauce (not too much) and we can cut it better on the plates - best presentation. (sorry if there are any mistakes, I am mainly French speaking especially writing) What do you drink with it? No garlic bread?? Love your vidéo, been wathching since the first one...

Yes you can pre-make, I make the same Tyler Florence lasagna recipe I take a sun day and make 3 at one time, and freeze the other 2 in foil pans. I take them out the night before and thaw in the refrigerator and bake as normal they come out perfect. Jelly that you have the same casserole dish. PS love your videos!!

I make Lasagna all the time, you can definitely make it the day before. You may need to bake it a little longer, but if you get it out of the refrigerator for about a half hour before you bake it, it’s not usually much longer.

Steve! That looks absolutely delicious! One question-how prominent is the cinnamon flavor? Can you actually pick it out and taste it when you take a bite? I think that’s the only thing that throws me off-but I still want to attempt it!

i'm sure it tastes great - I think the béchamel recipe had too much flour (or needed more milk) - should be more of a sauce consistency so its easy to pour over the pasta and spread around, we also do a layer of béchamel on the top layer and cover with parmesan. Ive always made it in the morning then stuck it in the fridge and bake for dinner - always turns out well.

Hi! Great video as always! I make the lasagna from the book - The Fat Fallacy by Dr. Will Clower. Of course - I double the sausage, mozzarella and parmesan cheeses... But you can't beat the wonderful flavors of the cabernet and cayenne pepper. I highly recommend the lasagna recipe and all the recipes in this book!

Oh I loved it! Definitely needed a good amount of salt and pepper to adjust the seasoning, but otherwise I really liked it.

Mike, This looks like s great recipe but I am concerned about the amount of alcohol you used, is an “entire bottle of wine” appropriate when a child will be eating the dish? I have been trying to find the answer on the internet, what do you think?

So I asked our pediatrician this a few years back and she confirmed what I knew from cooking - the alcohol burns off during cooking so it is safe. Especially in this recipe where the sauce simmers for an hour and a half, all that is left is the flavor.
