Kurt, you have really adapted the Filipino culture 💯! In our culture, rising up as early as 4AM can be seen as a sign of diligence and responsibility. Typical Filipinos wake up before sunrise and start getting ready for the day. Back then, when we were working in the Philippines, we hated Hospital’s morning shifts, because morning shift means waking up at 4AM, so we could secure a spot in crowded public transportation, beat the traffic and clock-in before 7AM. That’s also one of the reasons why we love working night shifts, we never liked rising up early in the morning. 😁😁

Night shifts are something different! I used to pull the graveyard shift as an armed security guard right out of high school and I would go nearly crazy during my 12 hour shift from 6pm - 6am (and also fell asleep in my car more than a few times)

Seeing elderly people in your vlogs always brings back memories of my grandmother. When I was just six years old, I'd wake up at 4 AM to join her at the bakery to pick up the pandesal we would sell around the barangay. This was my morning routine for seven years before heading to school. I deeply relate to the traditional cooking knowledge passed down through generations, much like what Nanay Belen shares. We love pairing Sikwate with Puto Bumbong or Bibingka. When the BER months strike, what really comes to mind is Bibingka and Puto Bumbong, our favorite Christmas Filipino delicacies. Those are being sold by street vendors right infront of the churches. The inviting sweet aroma of Puto Bumbong gives a festive atmosphere and we often described it as a distinct "Christmas Season" scent. ☺️☺️

Nanay Belen’s Filipino SIKWATE is so flavorful because, the chocolates in the Philippines are 100% PURE Mayan chocolate specie from the original Mayan Empire before they were adulterated from cross breeding experiments. The SIKWATE you have tasted was the same kind of chocolate that Aztec Emperor Montezuma II drank before the Spanish conquest of Mexico. When Spanish explorer Hernán Cortés arrived in Mexico, Montezuma II served him xocolātl in golden goblets. Cortés introduced the drink to the Spanish courts, where it was expensive and only the wealthy could afford it. I enjoy my hot chocolate with milk. I add an extra heaping spoonful of powdered milk, dipping it in until it solidifies. I savor the solidified milk first, like a lollipop.😋 My dad and I always come up with creative ways to hide extra food from my mom because she scolds us.😂

In December, I love cooking steamed rice cakes, bibingka (cassava), and suman sa lihiya. Suman sa lihiya is a traditional Filipino delicacy made from glutinous rice soaked in lye water, wrapped in banana leaves, and then steamed. It's often enjoyed with grated coconut and brown sugar. These treats go perfectly with hot coffee, hot chocolate, or hot ginger tea and can be enjoyed for breakfast or a snack. Eating a heavy meal early in the morning can be tough unless I need the energy for work that requires physical strength. For an early breakfast, pandesal, pancakes, or a little oatmeal are just right for me. I’m quite fond of milk and cheese, so I enjoy my hot chocolate with milk and pandesal with cheese.

Puto maya is our 'meryenda' growing up.Sikwate is Cebu's version of the chocolate drink concoction made from cacao 'tablea'. Each region in Pinas has its own way of preparing this pairing. We simply call our drink concoction 'tsokolate'! By the way, you look less haggard during this early morning shoot! Good luck & Godspeed!

There’s the difference between living in the city than in the province. The sikwati & puto are still cheap. Sa city mahal na kaayo. This is the dark chocolate kinda can’t beat the dark chocolate in America lol. I will never trade my sikwati to the American dark chocolate lol. I always cook sikwati whenever I miss it. And even make puto here. With sikwati and mango. I’m glad KuyaKurt embracing the Pinoy foodie, now KuyaKurt I will ask you to try “MASI” masi is popular in Yati LILO-And if you made it to San Rem, you can pass by to Lilo-An , but should be there early too like 7 AM-9AM Masi- is made of fine glutinous rice with peanut. It’s one of my favorite that made from Glutinous. Then try the Bohol delicasies too, like Kalamay is made from glutinous rice too. Then “Moron” from Leyte, it’s also made from Glutinous rice😊 Good luck and looking forward to your food adventures.

Kuya Kurt, did you fall asleep last night or did you wake up early today? Around 3 AM your time, I saw that you hearted some comments. Sometimes at 12 AM, it seems like you're still awake. Magpahinga ka po at matulog ng tama para you look fresher and feel younger.😊
