Today I went to tilefish and Ichigaya's aji-furai restaurant.
Ajifurai, Japan's national side dish, is a deep-fried horse mackerel dish coated in breadcrumbs and deep-fried.
You could say it is a horse mackerel version of pork cutlet.
This restaurant seems to have really developed the common people's food, aji fry, into a higher-level cuisine.
