Lay a pie crust down in a shallow tart pan. Spoon in your raspberries. Cover with a crust, without crimping the edges. Cut a slit on the top to vent. Bake in a 350 degree oven for 20 minutes. Remove from the oven and carefully remove the top crust...which by the way is super yummy and makes for a great snack as you wait for the tart to be done! In a bowl whisk together 2 egg yolks, your cream and 1 tablespoon of sugar. Slowly pour this over your tart. Return to the oven and bake uncovered for an additional 20-30 minutes. Allow to cool before enjoying. * To Broil Potatoes (American Domestic Cookery, 1823. Published in New York) Potatoes Water, for boiling Rinse your potatoes till clean. With their skins on drop the potatoes into boiling water and boil for 15 minutes. This is called parboiling. Remove the potatoes from the water then grill them over a charcoal, gas of wood fired grill till done to your liking or set them over a gridiron over coals. Rotate the potatoes at least once while cooking. * Boiled Peas (American Domestic Cookery, 1823. Published in New York) 1 cup of fresh peas 1 teaspoon of fresh mint or a pinch of dried mint 1 tablespoon of butter Salt & pepper to taste Water, for boiling Boil your peas till hot. If you have fresh mint you may add the mint to the peas in the last minute of boiling before straining the whole together & seasoning with salt, pepper & butter. Or, if your mint is dried strain the cooked peas & then stir in the dried mint, salt, pepper & butter till well incorporated. Peas were frequently prepared with mint in this time period.

Only indoor plumbing could make the cabin any better! I'm too old to fight the bear for the tree. When I lived in the local peasant village as a child (1960-ish) the electricity wasn't very reliable but the water always worked.

I absolutely love and adore your channel!!! I ran across it last year when I was looking at old medieval recipes for my LARP group. I did a full days meal from start to finish for a tavern in medieval England. I has meals that a serf, a merchant, a Knight and a Duke would eat and randomly had people select their place in a Lottery. It was a lot of fun, and your channel helped inspire me to do it again. I absolutely love these videos just the whole experience of not using modern day technology having to do everything from scratch, including prepare your meals on tools that we consider these days as primitive. The tools were handmade by blacksmith and Carpenters and people that had talent to use their own bare hands I just love it and then this precious little Cottage in the wilderness the way it was for so many of all of life and all colors slaves or Freman. This is how they were living and surviving and preparing their meals and I’m so grateful that they bought it all back to life and were kind enough to share the experiencewith us viewers I’m definitely a fan. I’ve been binge watching and my 19-year-old daughter can’t stop watching them with me. It’s amazing we’ve bonded over these videos. Glory to God. Thank you so much for sharing. You know that "throw-away" pie crust, soaked with the sweet raspberry syrup was just a special treat for the lady doing all the cooking! No way you're throwing that out! You're much more industrious than me on a rainy day. With the lovely sound of that rain on the roof, I would've passed the time napping!
