Love this! It's really cool to hear the relationship between different notes in the scales by hearing how the timing changes when you send a triangle wave to the quantizer, actually! It would be a good way to illustrate those relationships with rhythm equivalents to pitch.

Yes..a digital sample and hold can hold a voltage indefinitely...it's very simple if you know ur way around an Arduino..I could possibly do a video..

Do not fear...take the first step..yes this is a nano. But any arduino at hand should do. It is a matter of taking care of the pin assignments
