I prepared and roasted a leg of lamb for our Christmas diner this year. I am a fan of lamb meat because it is lean and tender, especially lamb meat from New Zealand. It was a simple recipe to make without so much fuss. I have to make adjustments to the length of time and the meat's internal temperature to get a medium rare consistency in the way the meat was cooked. It was a delicious treat for me and my whole family to savour and enjoy a roast leg of lamb.
