INGREDIENTS
20 small potatoes or 5 big ones (cooked in water until soft)
½ cup olive oil
Coarse black pepper
3 garlic cloves (minced)
½ bushel parsley (chopped)
Kosher salt
Lemon zest from ½ lemon
INSTRUCTIONS
1) Strain the boiled potatoes and cut them into halves if they’re small or into quarters if they’re big/medium.
2) Line a baking pan with parchment paper and pour ¼ cup of olive oil on it, then sprinkle some black pepper.
3) Arrange the potato halves (peel facing up) on the pan.
4) Put the pan on the highest rack and bake at 400°F (200°C) until the bottom sides are all nice and golden.
5) While the potatoes are baking, mix the rest of the olive oil with the garlic, parsley, salt, and lemon zest in a bowl.
6) Once the potatoes are done cooking, take them out of the oven and pour the oil bowl’s contents over them.
7) Brush the oil and spices into the potatoes to coat the sides evenly.
TIPS
Don’t skip the parboil. It’s the key to getting crispy edges without charring or burning. Plus, it helps reduce roasting time!
