I wonder if the speaker really means the late _18th_ century (1700-1800), at 0:30ff. The video generally deals with the late _19th_ century.

Why does he talk to the audience like they've never heard of a butcher shop or a grocery store before? Walmart still exists, and you can still go inside, and most small towns still have a butcher shop.
