@@LouiseT2405 thing is, even with home cooking etc, it can still be really expensive. Was chatting to an acquaintance today. He told me his family goes through 9 litres of milk a week, paying €2 for 3 litres at a time. That's €6 for 9l. I am lactose intolerant. Lactose free milk, which I use all the time, is €2 per litre. I go through 1l per week, to keep costs down, and because I live alone, thankfully. If I needed to buy 9l per week, it would cost me €18 compared to the other guy's €6, for just milk

@@MikeJeavons not sure if it's available in the UK, but here in Ireland, I can get cows-milk cream and cheese that have been processed to remove the lactose. More expensive, sure, but very much enjoyed lol. Also, hard cheeses like cheddar are pretty low in lactose already. I'm lactose intolerant, but because it's not very severe (intolerances can have varying levels of severity, in case you weren't aware), I can generally enjoy cheddar without issue. Having tried many free-from products out of necessity (I'm wheat intolerant as well, though gluten is fine), I'm looking forward to seeing how you get on. Love the channel loads. Yes in the US gluten-free lactose-free is on the average three times more expensive. And if you are Celiac you have to read the label on everything gluten is used as a stabilizer in many many products. Straight chili powder probably didn't have gluten in it but if you had chili blend it probably did.

About the soft and flexible stuff some gluten free products have on them. When these kind of products were less popular and used different methods to make it, that tended to make it more hard and rigid as a side effect. As a result the foods that needed heating before eating (mostly had experience of this from free from bread early on) It's likely just stuck around because advertising : ) edit : wording

We were informed of the issues I had, following blood tests.. and that was it. There was no help and almost no information available, back then. This was also rural Ireland, to add another level of difficulty, lol

@@timowthie Rural Ireland, mate. I remember a young girl being diagnosed with celiac's disease. It was really hard on the family. She had to cut out loads of stuff, with nothing to replace. If you wanted bread suitable for someone with the condition, you needed a prescription. It's only within the last 5 years that the 'flu jab has started to be recommended for everyone. Before that, it wasn't recommended unless you were in an at-risk group. Also, Diary is a big industry here. Being lactose intolerant, especially when I was diagnosed, was considered wrong. It was basically an insult to farmers everywhere. Up until my 20s, the only milk alternatives available were goat's milk (which tasted vile, so I couldn't drink it..) and soya milk (which I'm also intolerant to). It was nearly 10 years following diagnosis before I discovered the term "lactose intolerance". I was told by my GP, who was told by the lab that did the blood tests, that I was allergic. Simple as that. It's getting easier, little by little, go roll out correct medical information here.. but 25 years ago, intolerances didn't exist in my experience. And forget having your allergy accommodated. You worked around it yourself, with little or no help.. and by doing this, you greatly inconvenienced people. Really, you were expected to ignore your allergy and just get on with things as normal. I remember staying at friends' houses as a kid, and their parents refusing to let me eat my cereal dry, because to them, that was wrong. Even when I mentioned being allergic to milk, it was still poured into my bowl. And once that happens, you HAVE to consume it. Not doing so would have been considered the height of rudeness. It's always better to make yourself sick, rather than to be rude.

There are 2 dairy allergies: lactose intolerance and casein. The symptoms are the same, the rules differ. Lactose is the more common of the 2, casein is less known. Casein allergies can eat goat dairy, Greek products (casein binds to dairy fat so truly fat free dairy is safe) and since genetically the Americas cow dairy (A1) differs from European dairy (A2) casein allergic people are not allergic to the other type of casein, only the one type (There may be exceptions). Casein allergies are tricky as products labeled non-dairy usually contain some (minus lactose) but may not be on the label since it's in small amounts but can still cause symptoms. In those cases listen to your body, mot the labels. To go truly dairy free, you have to go vegan fyi... The more you know...

About ten years ago I learned about that allergy from a user in a now defunct forum. Everybody thought she was speaking nonsense when she claimed she couldn't eat dairy products without being lactose intolerant, but I got curious and she explained it to me. There's a ton more allergies and food intolerances than most people are aware of!

unless your unlucky enough to have to visit the free from aisle in a big supermarket for your diet needs why would you ever visit it and maybe not even on a week on, but then again saying that on the odd occasion where i have tried the odd free from product in asda then i was impressed with the taste, and when i didn`t really know what i really wanted for tea and for some reason decided to visit the vegetarian range of ready meals, i was generally impressed that even without meat they tasted really nice.

Can we please have a good shot of the sugar content in all these as you go. You'll find every single branded "free from" product has tonnes of sugar in. Dont be surprised if you do gain weight. Im a Coeliac and have had to come off all these products due to the sheer amount of sugar found in them all and weight gain and health problems associated with sugar/ carbs

Glutenfree food is usually very dry and oily as there is nothing to maintain moisture(something the gluten usually does). The reason the tortillas last basically last forever is that they are packaged with very little oxygen and moisture. Oat facts: Oats are technically gluten free but what usually makes them not glutenfree is that they generally are processed in the same machinery as wheat, also oats have proteins very similar to gluten so some people react badly to those as well.

During my brief period on a gluten/lactose free diet, I basically had to give up on cheese almost entirely. Generally it's easier to adapt to these types of diets (lactose free, gluten free, vegan, etc.) if you're open to completely new dishes, rather than trying to find substitutes and imitations of everything. A lactose free cheese or imitation beef, etc are always going to fall a bit short of what they're trying to imitate. Because at the end of the day, they just aren't the same thing. But a "free of" diet doesn't have to be based around imitation.

I tried a gluten / lactose free diet for a period. At the time I was convinced that either gluten or lactose were at the root of some stomach problems I was having. I have to admit, I lost weight and felt very healthy while I was on that diet. However I don't think that was directly because of the absence of gluten or lactose. I think it was because the diet forced me to plan meals more carefully in order to avoid gluten and lactose, and the meals were more healthy as a result. I had more home cooked meals and homemade treats. Though eventually I realized that lactose and gluten weren't actually what was upsetting my stomach, and it cost too much to avoid eating them. So I quit the diet.

"Masa flour" is what corn tortillas, champurrado, and tamales are made out of. It is an ancient form of flour made from nixtamalized corn (maize soaked in an alkali bath)_... also known as hominy. Hominy is used in Menudo, potzole, and in the USA "grits".

You made one mistake with the quesadilla, Mike. When you're frying 'em via stove top, you'll want to butter the outer sides of the tortillas as it gives it a really nice crispiness. I knoe you're doing gluten/dairy free this week on, but there are some decent alternatives to actual butter you could've used. I would definitely give it a shot if you haven't before, during a week on or not. Makes them so much better.

Something I've run into a lot, especially when I was just a baby vegan (meaning I'd been a vegan for less than a year; I was actually 29) is a LOT of people assume that vegans can't have gluten. I would have to tell people all the time, "No, gluten free is for people with wheat allergies." Not so much these days, thank goodness. I'll be honest, if I had a wheat allergy, I'm not sure I'd have been able to go vegan.

Im lactose intolerance and free from cheese is really bad unless you get the cheese that they have taken the lactose out of. So you can get a "lactose free cheese" (thats the brand) and the lactose free cathedral city cheese is really good.

My sister is vegan and while I like most of her cooking, vegan cheese is just odd. Not that it exists or how it's made, sometimes the taste is even pretty good, but the texture is off. As for the tortillas, they're basically just (other) flour and water. As long as there are no germs or mold on the tortillas or in the package, they probably last much longer than the best before date. The only other issue would be moisture escaping, making them brittle, but the package prevents that. So hooray for tortillas! A good thing to stock up on for the zombie apocalypse.

if the package of those tortilas is sterile inside and there/s some other gass inside instead of oxygen it can last well over a year of the pastic is not too porous (cause tho it's still tightly sealed gasses can leak into and from the package through the plastic itsel and that's the main reason for a 1 year shelf life) no oxygen = no mold and bacterias and no oxygenation = insane shelf life and noneed for harmful chemicals (chemicals are just the easier and cheaper way = put some safe amounts of poison in it and your good to go) ^_^

Gluten free products tend to be slightly more starchy than those without. Probably not a big deal.

Corn (maize) tortillas are naturally gluten-free. I guess they’re trying to make imitation wheat tortillas without wheat...

My brain got massively confused by seeing 'fried chicken steaks', because I'm much more used to 'chicken fried steaks', which only have chicken in the name because they're fried the same way you might fry chicken, and are actually beef steaks.
