To make the tree have more brunches, peal the buck above the bulb (leave ). This cuts flow of nutrients and makes food go to make a new brunch from the bulb.

Very good and commendable work. I would suggest that you also grow some cover crop for your soil to avoid leaving the soil bare. This will help to sequester carbon dioxide from the air and transfer carbon to the soil leading to a rich soil with beneficial microbes and biology that enhances productivity of the soil.
