Now you can enjoy the taste of delicious Halwai Style Alu Ke Lauz or Alu Ki Barfi at home.
Recipe:
Almonds / Badam - 125 grams
Potatoes / Alu - 1/2 Kg
Clarified Butter / Pure Ghee - 250 grms (or reduce to 150-200 grms)
Khowa / Mawa - 1/2 kg
Sugar / Shakar - 1 kg (ground to a powder)
Silver Paper - for the decoration
Procedure:
1. Soak almonds overnight.
2. Next morning, peel their skin. If you are unable to soak overnight, you can boil them to facilitate the peeling.
3. Grind the peeled almonds roughly.
4. Adding enough water, pressure cook potatoes till tender.
5. Peel their skin and cut into pieces.
6. Grind these potatoes into a fine paste without using water.
7. Add 250 grams clarified butter or pure ghee to the pan on low flame. Sweets contain a good amount of clarified butter, still, you can use lesser amount like 150-200 grams (250 grams is the perfect measurement for delicious alu ke lauz).
8. Add the potato paste. Remember to keep on low flame to prevent burning or else the taste will be ruined.
9. Add khowa or mawa.
10. Add the ground almonds.
11. Mix well and stir continuously on low flame for 5 min.
12. Add 1 kg sugar that is ground to a powder. This is the exact measurement and do not hesitate to add this quantity for that perfect sweetness, still you can reduce its amount.
13. Mix well and stir continuously on low flame.
14. This requires a lot of effort, it will take more than an hour for the mixture to solidify and attain the setting stage.
15. When the mixture is almost dried and when it starts leaving the sides of the pan or when it gets heavier, switch off the flame.
16. Keep stirring and allow the temperature of the mixture to come down.
17. Arrange a baking sheet in a tray. Dampen with clarified butter.
18. Spread and level the mixture.
19. Dampen the spoon/spatula with clarified butter for the levelling.
20. Decorate with silver paper.
21. You can spread the mixture in two trays.
22. Leave this to set, you can keep the trays in the refrigerator during the setting process.
23. Once it solidifies or sets, cut into the desired or diamond shapes.
24. Store in the refrigerator for about a week and use.
