Pricking irons aren’t meant to go all the way through only mark the leather ready for the stitching awl.

Correct. These pricking irons can be used as stitching chisels on thin (soft) leather. At their price and for those not familiar or confident with the full, traditional saddle stitch process. These IMO are a great starting point. Punch through without removing material, and stitch away :)

quick question regarding these, do you strop them like you would do a knife?

Yup. You can also use fine sand paper (or a mop on a bench grinder) to get inbetween the teeth.
